Recipe: Grilled Shish Kebabs

Lean meats and veggies contribute to a healthy pregnancy diet and this recipe's loaded with them. Do cooking smells trigger your morning sickness? No problem. Have your partner cook these kebabs on the grill!

We've gathered three marinades to match your pregnancy cravings -- spicy, sweet & tangy, or citrus. Enjoy!

Grilled Shish Kebabs

Prep time: 30 minutes | Total time: 3 1/2 hours | Yield: 8 servings

Ingredients

• 1 pound lean chicken, beef or pork, cut into 1" thick squares
• 2 cups raw vegetables, cut into bite-sized sections
  --mushrooms, green peppers, red onion, zucchini, cherry tomatoes
• 1/2 cup fresh fruit, cut into 1" sections (optional)
  --pineapple, mango, peach

Directions

Combine marinade ingredients. Place in shallow 9" x 13" dish. Cut meat into 1 inch thick squares. Add to marinade and stir to coat. Cover and refrigerate until ready to grill. Skewer meat cubes on metal or bamboo skewers, alternating with vegetables and fruit. Grill kebabs for five to seven minutes on each side or until done as desired. Excellent served with whole grain pita or brown rice.

Choose your marinade!

Spicy Marinade -- great with lamb

• 1/3 cup olive oil
• 1 teaspoon garlic, minced
• 1/2 teaspoon cumin
• 1/4 teaspoon turmeric
• 1/4 teaspoon ground red pepper or cayenne

Barbecue Marinade -- meshes well with chicken and beef

• 1/3 cup cider vinegar
• 1/3 cup tomato paste
• 1 teaspoon seasoned salt
• 2 tablespoon light-sodium soy sauce
• 1/3 cup brown sugar
• 1 teaspoon ground ginger

Grapefruit Marinade -- out of this world with chicken or fish!

• 1/3 cup unsweetened grapefruit juice
• 1/4 teaspoon grated grapefruit peel
• 1/2 teaspoon cumin
• 1 garlic clove, minced
• 1/8 teaspoon salt
• 1/8 teaspoon pepper
• dash to 1/8 teaspoon cayenne pepper

Cook's Note

If you're using bamboo or wooden skewers, soak them on their own for a half-hour before use. This keeps them from easily catching fire. If you get into the shish kebab habit, you might prefer to invest in stainless steel reusable skewers.
