Recipe: Roasted Lemon Herb Chicken

The fresh herbs in this recipe provide an earthy base note, and the lemon zest adds its own song. One bite of lemon herb chicken is like a little party in your mouth.

Roasted Lemon Herb Chicken

Prep time: 15 minutes | Total time: 1 3/4 hours | Yield: 8 servings


• 2 teaspoons fresh basil, chopped
• 2 teaspoons fresh oregano, chopped
• 1 teaspoon rosemary
• 1/2 teaspoon marjoram
• 1/2 teaspoon thyme
• 1/2 teaspoon mustard powder
• 2 cloves garlic, finely minced
• 1/2 teaspoon salt (optional)
• 1/2 teaspoon ground black pepper
• one 3-pound whole chicken
• 2 lemons
• 2 tablespoons olive oil


Preheat the oven to 350° F. Combine the seasoning, salt, mustard powder, garlic and black pepper. Set aside.

Rinse the chicken thoroughly. Remove the giblets. Rub 1 1/2 teaspoons of the spice mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.

Juice the lemons. Combine the juice and olive oil in a small measuring cup. For additional flavor add 1 teaspoon zest from the lemon. Drizzle half of the mixture over the chicken.

Bake for 1 1/2 hours or until juices run clear, basting several times with the remaining oil mixture.
