Even though it's supposed to be nearing 80 today, fall is definitely in the air!!! I LOVE soups and chilis and all those fabulous comfort foods that are best enjoyed in the fall/winter. I thought maybe we could share a few of our favorite recipes. I'm particularly looking for something great to do with my butternut squash sitting on the counter. i usually just bake it and serve with butter and cinnamon and maybe honey, but am interested in finding something else to do with it.
Here is a recipe that is absolutely TDF!!! I had it at a restaurant last winter and got the recipe from them. Definitely NOT the healthiest, but you could modify it to make it healthier. It's SO good, though. We made it again last night.
Apple, Sweet Potato and Pumpkin Bisque
1 large onion, diced
3 garlic cloves, diced
4 large carrots, diced
1/2 stick butter
Saute all above ingredients.
2 sweet potatoes, peeled and diced
Add to pot and cover with chicken stock* plus 1 inch (about 6 cups). Boil until potatoes are tender.
Add the following to the pot:
1 29 oz can pumpkin
25 oz apple butter
1 pint heavy cream
Boil until thickened.
* from America's Test Kitchen, we picked up the tip that you can make your own stock or broth from a 'cooking base.' We have two little jars of Chicken Base and Beef Base in the fridge. They weren't expensive and it takes forever to use them up, since you use very little to make your stocks and broths, and the flavor is WAY better. Cheaper and yummier!!
