Pasta Salad Recipe (OT)

Hey gals. I have to take one to a BBQ on Monday and am wondering if anyone has a nice recipe. I've never made one before and would like to avoid buying it.

Ok so I am asked to make this so often... my friends LOVE THIS. I was asked tonight to make it for the BBQ on the 4th.

Marinated Tortellini Salad

50 uncooked cheese-filled spinach tortellini (about 2 cups)

3/4 lb. mozzarella cheese, cut into 1/2 inch cubes

50 grape or cherry tomatoes, or small pitted ripe olives
I usually add both.. (1 can of olives)

Marinade:

2/3 C. tarragon vinegar ( I use red wine vinegar)

1/2 C. olive oil

2 cloves garlic, peeled, minced

1 T. sugar

1 t. salt

1/2 t. freshly ground black pepper

2 T. water

Hot red pepper sauce to taste (I use Tabasco.. couple of shakes)

1 T. fresh chopped parsley (Italian flat leaf- fresh)

Cook the tortellini according to package directions. Drain well and cool completely.

In a medium bowl or plastic sealable bag, place the tortellini, mozzarella cubes, tomatoes and olives. Set aside.

In a glass measuring cup or jar with a tight-fitting lid, combine all the marinade ingredients. Pour the marinade over the tortellini. Cover and refrigerate at least 2 hours or overnight, stirring occasionally.

OMG Kelly, that sounds delicious!! Can you use the Barilla brand spinach tortellini?

If you want to go SUPER EASY this is what we always had growing up:

Pasta of your choice (1 lb)
Veggies of your choice
Bottle of italian salad dressing (we always used zesty italian)
Salad supreme to taste (you buy it in the spice section of the grocery store)

I've also had a variation of Kelly's with raspberry vinagerette and walnuts. Yum!

Mmmmm, that tortellini salad sounds delicious!

Here is a real quickie that is also very tasty:

Bowl of Bows

8 oz pasta bows
1/2 cup cooking oil
1/3 cup vinegar
2 tsp basil
1 tsp oregano
1 garlic clove, minced
1/2 cup chopped green onion
1/3 cup grated Parmesan cheese
2 tsp parsley flakes
1/2 tsp salt
1/4 tsp pepper
1/4 cup cooked peas
1/2 cup cubed Cheddar cheese

Cook the pasta bows, drain and return to pot. In a small bowl, mix the next ten ingredients. Add to pasta and toss well. Add peas and Cheddar; toss. Cover and chill about 4 hours. Stir thoroughly from bottom, transfer to a bowl and serve. Makes about 5-1/2 cups.

I like to add thinly sliced celery for crunch. This salad is great served with ham and steamed yellow zucchini. Smile

I have used all kinds of tortallini.. I usually buy the fresh ones by barilla in the fridge section.. sometimes I get spinach(cheese filled) and sometimes they don't have that so I get regular cheese filled.
I ALWAYS add Salame chunks to it.. to me it needs a meaty addition.

I usually make ahead as well.. the longer it sits the better it is.. just jostle it every so often so they all get the marinade on them.

It's excellent leftover .. if there is any Wink

I just made this this past weekend and everyone loved it! You can add as much or as little to it as you like.

16 oz rainbow rotini
green olives
black olives
green pepper
red onion
tomato
cheese (any kind - I used colby jack)
bag of mini pepperonis
1 bottle of Kraft Light Zesty Italian dressing

Mix it all together - yum!
