Can you share your favorite easy recipe?
My husband loves this. It's not my recipe (got it from a Kentucky cook-book and a coworker) but it's tasty and easy! It's called Benedictine Spread.
1 cucumber, peeled and finely grated
1 tsp finely grated green onion
1 8-oz cream cheese, softened
1 Tbsp mayonnaise
1 tsp salt
2 drops green food coloring
Squeeze excess liquid from grated cucumber. You can wrap it in a couple of layers of paper towel to do so. Combine ingredients in a bowl, mashing with a fork, leaving the food coloring until last. Use on white bread. If you want to make a dip, leave more of the cucumber liquid.
dh's newest fav teriyaki chicken (or pork, does butterfly pork chops really nicely!)
your choice meat (2-4 lrg chicken breast, 2-4 pork chops, etc)
1/2 cup soy sauce
1/2 cup water
1 tsp sugar
shake n bake
in large ziploc bag mix all but shake n bake. let marinade in fridge one hour. line pan with tin foil, remove meat from marinade and shake n bake, cook to shake n bakes instructions! throw out marinade and bag, when done throw out tin foil, serve with fav side dish! we use liptons sidekicks with 1-2 cups of frozen mix veg added.

This is a Weight Watchers one we really like. We eat it probably twice a month.
Cheddar-Stuffed Buffalo Burgers
1 pound ground buffalo meat
1 small vidalia onion, finely chopped
1 teaspoon Worchestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup low-fat shredded cheddar
4 English Muffins (instead of buns)
mix the meat, onion, worchestershire, salt, and pepper in a bowl. Divide the meat mixture into four balls, With your finger make a deep indentation and fill it with one fourth of the cheese. Pinch the meat closed to cover the cheese, and gently flatten into a 3/4 in patty.
toast the english muffins, cook burgers 4-5 minutes per side for medium. Serve with lettuce and tomato.

Now for my NOT healthy one
Toll House Pie.
9 inch pie crust (unbaked)
2 eggs, beaten until frothy
1/2 c flour
1/2 c white sugar
1/2 c brown sugar
3/4 c butter, melted and cooled
1 c chocolate chips
preheat oven to 325 F. Combine beaten egg, sugars, flour, and mix thoroughly. Add melted butter and chocolate chips, mix and pour into pie shell. Bake for one hour until top is golden brown.
Tastes like an extra gooey cookie in a pie crust - yum!
