    Default What are you eating for lunch?

    I'm so bored with my lunches these days. What are you eating for lunch lately? I'm still not doing the deli sandwich thing and I really really just want to eat a deli sandwich. I eat the toasted ones, but I want a cold one.

    Today I have a salad, with some leftover baked chicken and some fruit. I typically do a salad, a frozen burrito, a soup, a PBJ sandwich and then I go out to lunch on fridays.

    I need some quick ideas though, bc I have no time these days.

    I ate some pizza rolls and a Twix bar. LMAO I don't usually eat like that for lunch, I had to come home early because there was a heating/cooling guy here waiting on me and no one bothered to let me know he was coming.

    I can't help ya on this one. Breakfast and lunch don't really "exist" for me, I eat crackers or something throughout the day so hopefully I'm not so hungry that I feel the need to eat a meal because that hurts my stomach.

    I usually try to make enough dinner so that I can have leftovers the next day for lunch. If that doesn't work (like I don't have leftovers), I do a sandwich (I totally do the cold ones - I know, I know, bad Alissa!) and some canned soup, or some fruit and veggies. If I didn't have to watch my carbs, another idea would be a baked potato with cheese and what not with a salad or some soup. You can also pre-make some things like burritos and freeze them yourself to throw in your lunch, but I'm not that enterprising. Hmmm.....what else? What about hummus and veggies and pita chips? I love hummus, and that's easy enough to throw together. Or if you have access to a toaster at work you could bring a bagel and some cream cheese, and then whatever veggies or soup sounds good on the side.

    Yeah I do a lot of leftovers. What about the frozen meals? I was eating some of the Stouffer's ones the other week and Lean Cuisine and Healthy Choice have some tasty ones as well. I tend to want something hot for lunch and have NO desire for a deli meat sandwich but that's just me.

    I do bring hummus and veggies, its usually my afternoon snack along with some fruit and or trail mix. I was doing leftovers for awhile, but somehow I dont seem to have anymore. Im eating more at dinner I guess. I might get some frozen meals next time to switch it up.

    Lunch for me is usually leftovers-I cook large portions to be sure we will get at least two dinners and hopefully one or two lunches for me out of it so I don't have to cook as often. If we don't have leftovers, I bring a sandwich-I'm not very creative when it comes to lunches, I'm afraid.

    I struggle with lunches too. I'm not a big sandwich person, never been, so it's often leftovers. Sometimes I'll make a big pot of soup or chili or something like that and freeze it in portions, but not often. If I'm feeling really cheap, I'll just do a bunch of rice and beans and take those.
