i didn't want to post on your lodge, so i'm asking here. Kindof a dumb question but do you freeze your meatloaf raw or cooked? can you cook it frozen? if you freeze it raw do you freeze it in the loaf pans then seal it up? thanks thinking with this one i need to make some meals in advance!

I freeze it raw, then thaw it out (in the fridge) before baking it. It takes awhile to thaw, so you have to pull it out of the freezer a day or even two before you want to serve it. I actually don't cook my meatloaf in a loaf pan- I use a loaf pan to form it (like a mold) and then flip it out onto a parchment-lined baking sheet to cook. So when I'm freezing it, I form it in the loaf pan, then flip it out, wrap it up, and stick it in the freezer. Here is the recipe I use: http://www.foodnetwork.com/recipes/a...ipe/index.html
The only difference is I usually use a green bell pepper instead of a red one, because it's what we tend to have in the house. Really, really yummy recipe!
While were talking food! I have a question for you too - I'll be making some pumpkin bread & I remember you saying that you had a recipe that called for sweet & condensed milk? I need to go look on your lodge again to make sure I'm remembering right - but if I am I'd love to try your recipe!
Meatloaf is big in our house too, I came across some fun recipes on food.com yesterday & I think I'm going to try a new recipes - something similar to this one http://www.food.com/recipe/mini-meatloafs-32834
My pumpkin muffin recipe uses evaporated milk- I think that's the one you're thinking of. I have a pumpkin bread recipe too but it's different (dairy-free for my mom). I'll PM you the recipes! The pumpkin muffin one is my favorite- really, really good!
Ooohh DH loves meatloaf, I'm glad you guys posted this recipe!
