Weekly Thread! Crock Pot Dinner's & Recipe's! Share them!

I like to use my crock pot a lot! The things I make in mine are general things so I am looking to try more!

I make

Chili
Pot Roast
Pork Roast
BBQ Meatballs
Pork Chops

I made taco soup once but it was gross so if anyone has a recipe for a good one thats not werid I would love to hear about it! Also I heard people make sloppy joes in the crock pot but raw ground meat in it? I don't know!

I like the crock pot too, but I am so unimaginative with it!

One of our favorites though is hot beef sandwiches. I just cook a roast in enough water to cover it, add 2 packets of onion soup mix, and let it go until the meat is falling apart. We serve on the soft hamburger buns or kaiser rolls, and I also make cheesey potatoes and baked beans with it (or potato salad).

Then the next day I use the left over meat to make enchiladas...

I do Pork Roasts most often, with potatoes and veggies lining the pan.
BBQ Chicken for sandwiches
Chicken and dumpling soup
Chicken noodle soup
I've also done crock-pot stirfry, but it didn't come out to my liking.

In response to the taco soup... it's not quite taco soup, but this is a really yummy chicken tequila soup recipe for the crock pot:
1 small onion cut into 8 wedges
1 cup frozen corn, thawed (I put it in frozen and it was fine)
1 can (14.5 oz) diced tomatoes undrained
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
1 whole fryer chicken (about 3 pounds)...I used 2 large pieces of boneless skinless chicken breast...worked great!
2 cups chicken broth
3 tablespoons tequila (optional)
1/4 cup sour cream

Spread onions on bottom of crock pot/slow cooker. Add corn, tomatoes, garlic and cilantro. Mix well to combine. Place chicken on top of mixture.
Combine broth and tequila in a medium bowl. Pour over chicken and tomato mixture. Cover and cook on low for 8-10 hours.
Transfer chicken to cutting board, remove skin and bones and pull meat apart into bite size pieces, return to slow cooker and stir.
Serve with sour cream if you like.

It is sooooooo good! If you like a more brothy soup, I would add another cup of broth. It's also good with some white beans, jalapeno peppers, or any other southwester items you

Spaghetti sauce,
Throw some mince int he crock pot, chuck in a bottle of sauce, a tin of diced tomato, a tin of tomato paste, a good squirt of bbq sauce, some chicken stock powder onion and garlic. Cook all day and serve over pasta.

Lots of great recipes! I'm going to have to try some of them!

My all-time favorite crock pot recipe is one that I made up:
*4 pieces of chicken (leg quarters, boneless breasts, boneless thighs, etc.), can be frozen
* 1 can diced tomatoes with chilis
* 1 can condensed mushroom soup
* veggies (You can use green beans, mushrooms, corn, cellery, potatoes, peas. I like to use 1 can of straw mushrooms and 1-2 cans of green beans)
The broth from this recipe is soooo good, that I've been known to keep it and make more chicken the next day with it Smile

And another one that's super simple and yummy:
Salsa Chicken
*4 pieces of boneless, skinless chicken (breast or thigh)
* one jar of salsa (any kind)
* 1 cup of beer
* juice of 1 lime
Cook on high *uncovered* for about 6 hours, until the chicken is falling apart. Serve over rice or pasta or on a sandwich.

BBQ chicken: same as above, but ingredients are 4 pieces off chicken, small jar of BBQ sauce, and small can of pineapple
