I love my cheesy/crunchy chicken!

Ingredients:
1 lb boneless chicken breast/tenderloins
swiss cheese
1 can cream of chicken soup
1/4 cup milk
1 box Stovetop chicken stuffing
1 stick butter

Directions:
Preheat the oven to 400 degrees. Place the chicken into a square baking dish and cover with slices of swiss cheese (or whatever cheese is your fav!). In a separate bowl, mix together the can of cream of chicken soup and the 1/4 cup of milk, then pour over chicken/cheese. Pour the whole box of stuffing on top of the chicken. Melt the stick of butter, then pour butter over the stuffing. Place into the oven and bake for 45 minutes or until chicken is cooked all the way through.

*I like the stuffing crunchy, so I leave the casserole uncovered while it's baking. If you would like the stuffing to be more "soft and stuffing like" simply cover the dish with foil before baking! Enjoy!!

Mmm, that sounds yummy! I actually hate cooking! I like to bake. So I would have to say I like to make a good pudding pie. Hardly any work at all and tastes so YUM!

oh my gosh Krystal that sounds so fattening and amazing!!! I think I would have serious guilt if I made that. Although if I was over at your house I would totally try it lol!!!

This is a new recipe I just tried.

1/3 cup grated Parmesan cheese
1 1/2 cups cut-up cooked chicken
5oz shredded mozzarella cheese
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
6-10oz tomato sauce

crust
1/2 cup Original Bisquick® mix
1/2 cup milk
1/4 teaspoon pepper
dash of garlic and italian seasonings
1 egg

Heat oven to 400ºF. Grease 9-inch pie plate.

Sprinkle Parmesan cheese in pie plate. Mix chicken, mozzarella cheese, the oregano, basil, garlic powder and tomato paste; spoon over Parmesan cheese.

Stir Bisquick mix, milk, pepper and eggs until blended. Pour over chicken mixture.
Bake for 35 minutes.

here's a pic from the website where I found it Smile they put more cheese on top

I like making enchiladas when I get together with friends.

I boil a bunch of California chiles until they're limp and then blend the chiles with some of the now-red water, a quarter of a white onion, a few cloves of garlic and some salt. I douse a tortilla in the sauce, pan fry it, then stuff it with boiled potatoes, shredded chicken, beans, and/or Mexican cheese with diced raw onion.

Lately DH loves green Thai curry. So I bought green curry paste off amazon(we don't have an Asian market anywhere reasonably close). We've been eating green curry once a week.

It's really easy.

1lb. Chicken(thighs or breasts boneless)
1 can coconut milk
2 Tbsp green curry paste
1 onion
1Tbsp Oil
Veggies
1-2Tbsp Lime juice
Lime zest from 1 lime
1 Tbsp Brown sugar
2Tbsp fish sauce

Basically sauté chopped onion in oil with curry paste for 4-5 minutes(onions are clearish) add can of coconut milk and equal amount if water. Bring to boil add chicken(bite size peices) reduce to simmer until chicken is cooked(about 10-12minutes) add veggies and cook until tender. Just before serving add remaining ingredients. Stir throughly and serve over rice as desired. It yummy without rice too like a soup.

Tonight we had broiled salmon.

Super easy too.

Basically cut indiviusl salmon portions and place in a glass dish or cookie pan with a lip on foil for easy cleanup. I usually spray with Pam so it doesn't stick.

Melt some butter and pour on top of fish. Then sprinkle Cajun seasoning on top. Place under the broiler(about4-5inches away) for 10 minutes for every one inch thickness of fish. Check for flakiness to ensure fish is throughly cooked.

I serve this with some sauteed veggies.

I love cooking, but this week I've been all about the baking. I just made pumpkin chocolate chip bread and it is soooo good. DH and I have eaten almost the whole loaf already and I just made it a couple days ago!!

Dude! 9:20 in the am, and y'all making me hungry!!! LOL!

My "go to" recipie is biscut cups. The DH and Kiddo loves 'em.
1 can frozen biscits
1 jar spagetti sauce
shredded cheeze (the mmore the merrier!)
1 lb ground beef

All you do is brown the beef. Spread the biscits in the bottom of each 'hole' in a muffin tin (or mini loaf, but it takes 2 can of biscits this way). Mix the Spagetti sauce with the beef, and fill each "cup", then pop in the oven until the muffin bakes (follow directions of muffin package). Put cheeze on for the last 5 minutes. Yummm......

I love it so bad, too! My boyfriend refused to even try them the first couple of times I made them at the house, saying he hates pumpkin pie. What? Me, too. These are a bazillion times more awesome. I never should have pushed the issue because now he steals mine!

I like these ones as super unhealthy muffins: http://www.runnersworld.com/article/0,7120,s6-242-303-504-12631-0,00.html

I actually started taking out the dry ingredients to make them and there the stuff sat for two weeks. I had to put the flour and everything away again when the chocolate chips somehow mysteriously disappeared...
