What is For Dinner?

I am planning on making up some meals this weekend for the freezer, etc. I need some new ideas ladies.

Chicken bacon lasagna is one of my standby dinners (it's DH's fave).
I'm not overly creative when it comes to cooking stuff and freezing, I've done lasagna, mac and cheese, chili, stew, meat pie and perogies but that's about as creative as I've ever gotten lol

Tonight's dinner was delish but not freezeable. Double bacon burgers with cheddar and maple braised onions. Then garlic parm over baked fries. Mmmmmmmmmmmmm. Smile
I don't freeze a lot, but I like to cook meats and then portion them to freeze. So easy to just thaw and add to a recipe. My freezer is tiny so it sucks. Hope you get some better ideas.

I treid to come up with stuff to cook and freeze, in teh summer I separate chicken breasts and add seasonings before freezing. that's about it lol

DH made lasagna on Monday and I have had it every night for dinner lol... I leave the house at 7am and usually get home and 8pm after the gym and starving, so ya, that's why.... Blush

I made this the other night and it was INCREDIBLE. I'm calling it "superfood salad" since it is chalk full of antioxidants and other health boosters. But this one is easy, fast, and incredibly healthy and it was really, really good!

1/2 cup dry quinoa
1/3 cup red onion, chopped
1 orange, peeled and segments chopped
1 avocado, chopped
1 cup canned black beans, rinsed and drained
1 cup pomegranate seeds (about 1 pomegranate worth)--I bought them
already seeded--way easier!
1 cup shredded carrots
1/3 cup cilantro, chopped
salt & pepper

Cook the quinoa and set it aside, then when the salad is done, mix it
in. I topped mine with sauteed shrimp and a light balsamic
vinaigrette.

YUMMY!!

Sarah- on days that I go to work and come home (vs. staying near work) our long days sound similar. I should leave my house by 6:30am and get home by 7 pm if there aren't traffic troubles. Nice DH you have.

Erin- I am SO making your recipe this weekend. It sounds DELICIOUS. Thank you for sharing this!

I try to make meals for the freezer and meals for the fridge so that DH and kids can eat pretty quick after getting home. They leave the house at 6 am and don't get home until 6 pm.

I have corned beef and and cabbage in crockpot now, as well as 3 bean tacos in another crockpot. Tomorrow I am making 4 meat loafs (1 for a meal during week, 3 for freezer), spaghetti and meatballs, and possibly a lasagna and a minestrone.
