What's for dinner?
I have the motivation to make something for dinner tonight. (My poor family is still suffering, eating basically coldcuts and frozen food.) One thing I can't seem to get enough of is broccoli. Yum! It's really gloomy and kinda cool here, so I think some broccoli cheese soup is in order. What is everyone else eating tonight?
I have also been neglecting my family at dinner time. I think DS had SpaghettiOs for dinner 3 different times last week. :bwush:
Tonight I have to go to DS's school for Meet the Teacher night so we will probably have pizza. Does it help that I am making sure he takes his multi-vitamin everyday since I have been feeding him such sad meals?
Either barbecued chicken or Perkins. Was craving barbecued chicken yesterday but ended up having Tilapia and fresh picked sweet corn from the garden. Took the chcken out though for today, but then was craving Perkins before bed last night, LOL. It might just be Perkins if I have something to celebrate tonight. I am not saying, I jinxed myself last week
Marie, you are craving broccoli???? Wow, I'm jealous! I am craving sugar and nothing BUT sugar.
Claire, mmm spaghetti O's! Haven't had those since I was a kid! I should probably get some. :)

I bought a bunch of chicken breasts yesterday so I'm going to make 2 chicken pot pies (one for tonight and one for the freezer) and then tomorrow I'll make a big batch of lime chicken tacos in the slow cooker so I can also freeze half of that. Is anyone freezing meals to get ready for the baby? I've been doing some been then have been using them! LOL
mmmm...chicken pot pies!!! IF you ever feel like sharing the recipe, I am all ears :) I have made a weight watchers version of a pot pie dish and that is pretty good too. I don't think the kids would touch it though.
Perkins is a a breakfast type resteraunt,and I was wanting hash browns and some egg and sauce thing with sausage over a english muffin they have, LOL. We will see what the cravings bring tonight.
I made a brocolli salad that is really good and had it yesterday. It was weird because with one of my kids, I think Ben, I could not eat brocolli the whole time I was pregnant. But he loves cooked brocolli now.
I also crave desserts and sugar all the time with this one. Bad!!!

Last night I made sloppy joes, broccoli salad and cut up a honeydew for dinner...I don't know what to make tonight. I am thinking I want some homemade salsa, though, and I have all the stuff...so maybe tacos or fajitas tonight??? Time will tell. ;)
Jamie--you are good to start so early freezing things--I would do the same thing and eat them when I didn't want to cook! :)

**I made homemade fresh mango salsa and have everything cut up for steak fajitas...my mouth is watering just thinking about it. :) YUMMY!
aha... Perkins is a restaurant! LOL I don't think we have those in Utah yet. :) I will absolutely share the recipe for the chicken pot pie! It's a Betty Crocker recipe and it is NOT low fat or low anything... LOL. But it's so good that I make it once a month. My kids LOVE it! Well, my oldest does not but my two girls and my DH chow down like there's no tomorrow! Oh, and the recipe tells you how to make a crust, but I find that it's so much easier to just buy a frozen crust--I prefer Marie Callender's.
1/3 C Margarine or Butter
1/3 C Flour
1/3 C Chopped Onion
1/2 t Salt
1/4 t Pepper
1-3/4 C Chicken Broth
2/3 C Milk
2 C Cooked Chicken Cut up
10 oz. Frozen Peas and Carrots
1 pkg. of Two Frozen Pie Crusts (one for the top of the pie, one for the bottom)
1) Preheat oven to 425.
2) Take frozen pie crusts out of freezer and thaw on counter while preparing filling. Invert one pie crust over some wax paper, this will be the top of the pie. (Tip! If I don't already have the chicken cut up and cooked, I cut it up now and cook it while preparing the rest of the mixture).
For the Mixture:
3) Heat butter over low heat until melted and blend in flour, onion, salt, and pepper.
4) Cook over low heat stirring until mixture is smooth and bubbly.
5) Stir in broth and milk.
6) Heat to boiling, stirring constantly.
7) Boil and stir for one minute.
8 ) Stir in chicken and frozen vegetables.
9) Place mixture into bottom pie crust.
10) Place top pie crust over mixture and seal edges to bottom pie crust using a fork (Tip! I don't bother to roll out the top pie crust unless there are cracks in the crust that I cannot seal easily. If you want a perfectly smooth top with no extra pie crust at the edges, it's best to roll out the top with a rolling pin.)
11) Cut slits in center to allow steam to escape.
12) Bake at 425 for 30-35 minutes or until crust is brown. (Tip! I place the pie on top of a cookie sheet to prevent any spill over. Also, you can use a pie crust edge protector to keep the edges from over-browning.)
Here's one last tip! I have a couple of large pans so I always double the recipe, place half the mixture in a pie to cook for dinner that night and place the other half of the filling mixture in a gallon freezer bag. I keep it with the frozen pie crusts until ready to use for next time! Seems like a lot of instructions but I found that after I got used to making it, it's really pretty easy!!

Tonight we are just having an Irish Stew croc pot meal that came out of our Better Homes & Garden's cookbook. DH is really big on the dish so we got stuff for it. It's pretty simple and I'm curious to try it as I don't know that I've had it before.
Yesterday we had a simple but yummy new dinner--kielbasa chopped up in about 1/2" slices, baked with brown sugar and pineapple chunks for about an hour. We had it with egg noodles and salad and it was pretty good. I just want to save the pineapple juice next time instead of draining it so I can make a glaze.
so guess what I bought to make for dinner in the next couple days...stuff for brocolli cheese soup ;) That sounded good and my son came home a couple days ago and said he had it for lunch at preschool and "gobbled it all up" So I am going to try making it.
