    This, or something similar, is usually my first night dinner, it can heat up on the fire while we finish setting up camp.

    Another favorite dinner, I make this with Tofurkey Italian Sausages. I don't have a Dutch oven, I just make it in a pot on the camp stove.

    Other breakfast foods are cream cheese & bagels, or instant oatmeal packets with fresh fruit. And I discovered, quite by accident, that combining a packet of multigrain pancake mix and a packet of cornbread mix makes a really wonderful breakfast, it's like a thick, sweet, corn-flavored pancake that doesn't need butter or syrup, although my kids do usually still want those things, LOL!

    Other favorite dinners are grilled cheese sandwiches with grilled Smart Dogs (DH hates this so he usually take a can of soup if I'm planning this one), French Onion soup with grilled bread, grilled veggies stuffed into baked potatoes, falafel warmed in foil packets and served with hummus, pita, and Greek salad.

    Lunch is my least-favorite meal while camping because we usually go hiking or do something else away from camp so it needs to be something packable, but also something that doesn't require much refrigeration. I usually do nice sandwiches the first day, pasta salad the next, and PB&J if we stay a third day. Three nights, four days of camping is pretty much my limit. After that, I want a real bed and a restaurant.

    Those banana s'mores look so good. We don't camp either because my snobbish husband only does hotels Actually, we camped with my whole family for 3 days before we got married (destination wedding at Mission Bay) and he HATED it. He said "only crazy white people sleep in tents on the ground...you will not catch black people doing this" LOL We tried again when my first daughter was about a year old...we were in Mexico, beachfront, sleeping in a tent right next to my parents RV. The wind and rain were so strong the first night that the soaking wet tent was literally laying on top of us as we laid in bed (wind forced it down that much). I thought it was a fun adventure and he thought he had found hell on earth. We haven't been in a tent since!

    I am so sad that my girls won't know anything about camping! (unless I can get someone else to take them!)

    Tin foil dinners - put veggies, protein of some kind & spices, wrap in tin foil and put on the coals. YUM!

    I like to bring chili that's already made for the first night and just heat it up. that way dinner is extremely quick while we set up camp.

    Tin foil dinners for sure!!! My ultimate favourite. Lots of versions of those and they can be premade in big lots, so there's less to worry about once at the campground.

    Yeah, take them by yourself! I've done it twice, and would do it again if the circumstances were right. Once when DH had a last-minute schedule change and Tiven was so disappointed so I decided to take her anyway. We were just over the bridge on Mt. Tam so I knew if it was too much trouble, we could just come home. And last year DH was being an *** so we left him home and did a two-night trip to the Russian River without him. We had a different tent and it was a PITA to put up myself. Some people in the next campsite noticed me struggling & came over to help but I was almost done by that point. If I was doing it again, I'd just ask right off. Maybe you can go somewhere he can be in a motel nearby and still do activities with you during the day?

    Potatoes, onions, mushrooms, steak, and baby carrots wrapped in tinfoil with steak spices and butter. Cooked in the coals. Yum.

    Well I feel the same way about camping, and you could not coerce me to go. I support your husband 100%.

    I am a Guide leader and I don't camp. We do lots of damper, smores (and one of the girls bought chocolate marshmallows in last week mmmm we now have decided we need to try smores with those). Other than that baked potatoes are pretty easy as well
