It's that pumpkin pie time of year again. How do you like yours? Dense? Fluffy like mousse? Custardy? Well-spiced, or just lightly seasoned?
I like my pumpkin pie dense & spicy.
We made our first pumpkin pie of the season on Saturday, baked a fresh pumpkin even. Yesterday Tiven had a piece of pumpkin pie at someone else's house. She came home & reported that it was, "Too sweet & too fluffy, like pumpkin-flavored marshmallows in a crust." This made me remember how long it took me to develop my recipe, finding the right balance of sweet & spice, finding the right mix of eggs & cream to get it denser than custard but not quite as thick as quiche. I remember one recipe I had called for only one cup of pumpkin puree, I figured that one was for people who don't like pumpkin flavor very much, LOL!
David Letterman is retiring. Such great memories of watching him over the past thirty-two years!
Dense and well spiced We are trying to cut out white sugar and processed sweeteners, so I made this one for thanksgiving. If I was to make it again I would up the spices and take out some of the milk, as I found it a little mushy (though DH liked it that way). You could not tell it was missing sugar though! It was super yummy.

I like(d) it like Kyla and Stacey. Can't eat it anymore without a serious double dose of Lactaid. I made the mistake last Monday (our Thanksgiving) of having a small slice with no whipping cream or ice cream, thinking I was okay, only to be up all night with violent cramps and diarrhea.
Funny enough, I never tried pumpkin pie till I was in my late 20s or early 30s. I think it grossed me out before - just the thought of eating pumpkin.
I don't like a mousse-y (is that a word? lol) pumpkin pie and I do like it fairly dense. I don't like a strong spice flavor..I like a true pumpkin flavor with a little spice.
I also adore squash pie the same way.
I'm not a huge pumpkin pie person. I always think it smells way better than it tastes. Give me pecan over pumpkin any day of the week. Having said that, if I'm going to eat it, I like it more custard-y and well spiced.
