I am in a dinner time rut. What are you all having for dinner tonight?
Tonight was a pasta dish with tomatoes, kidney & garbanzo beans, mushrooms, garlic, artichoke hearts, and olives.
Tomorrow is grocery shopping day, so I just made my menu for next week. On the menu are: homemade pizzas, using frozen crusts; mushroom veggie burgers with roasted potatoes & Caesar salad; BBQ tofu with udon noodles & spinach in a savory broth; and another pasta dish with "rosa" sauce (marinara & alfredo together) & veggies baked with a crust of ground nuts on top. DH & the kids will be having a quick & easy soup (fresh tortellini, frozen mixed veggies, and vegetable broth) one night when I have an appointment, and we're eating out the other two nights.
I ended up trying a recipe on the Weight Watchers website for baked ziti (sp?). It was the first pasta I have had in quite awhile. I was surprised how filling it was for just 7 points.
Dave made spaghetti with (turkey) meatballs last night. He always makes mountains of it and then we can eat it baked on a different day. Love it!
Also I made these amazing (but healthy) Orange Mocha Muffins that are delicious.
