    I put all of my cakes in the freezer. First, I put a very thin crumb coat on then put the cake in the freezer for 30 minutes or so. I then take the cake out and continue frosting the cake. I then put the cake back in the freezer. I have made many cakes this way with no problems.

    Having the cake frozen also does make the cake easier to transport as it is more stable than a thawed out cake.

    I'm thinking Bonita meant to freeze the cake before frosting?/

    No, I meant after It keeps the frosting in place.

    Lisa be careful with beer. It might make you feel awful. There are some okay gluten free beers out there but booze or wine will probably treat your gut better.

    Interesting. And it doesn't crumble? I don't freeze but mine doesn't crumble

    The naturopath said that as I kill off the candida overgrowth I will basically be going through a detox and will probably feel pretty icky from time to time. He said that non-wheat vodka and soda is my best bet. It's bye bye to Grey Goose and hello to Smirnoff (I did some research). Our selection of gf beers is horrible, and I'm not paying $16 for 4 anyway. There's one called Bard's which is supposed to be good but I can't find it anywhere. My problem isn't just the gf thing (and I'm not actually intolerant to gluten, apparently, it's just that wheat makes me feel gross), it's the carb/candida thing.

    We freeze them before frosting too. It makes it much easier to frost and less crumbs. I have never frozen after frosting I just let it dry out. Seems like a very large cake would be tough to fit unless you have a lot of space in your freezer.

    No, It does not crumble. I freeze before and after. Let me go find some pictures of cakes I have frozen.

    I freeze iced cupcakes after I make a large batch for an occasion. The icing looks fine once thawed but if I put a candy (like mini eggs at Easter) the colour of that runs.
