We had turkey chili with corn instead of beans (because I hate beans). Delicious! Dave has been trying some new types of onions and spices. Then I made some vanilla chai muffins which will be perfect for breakfast tomorrow.
(I'm glad you like those little lemon cakes. I want all food to come in a tiny bundt shape from now on, even spaghetti.)
I'm trying to eliminate carbs right now. That pretty much means that everything I like to eat is off limits. I don't eat much potatoes, but rice and pasta I adore, same with bread. I'm also eliminating refined sugar as much as possible. It's easy when in-your-face sugar, but almost everything contains sugar. I sense a bit of misery in my not so distant future!
Just from what I've been reading, eliminating entire groups is just not a particularly great way to get healthy. (I'm not talking about the sugar, which is an ingredient vs. a group.) Can you just cut down instead of eliminating them entirely?
When I can control the sugar, I don't use refined, and then of course there are all the things you can't control. Booo.
Lisa, I have ulcerative colitis and about a year ago I tried an elimination diet in an effort to save myself from having surgery. I found out pretty quickly that I am gluten intolerant and intolerant to anything that has sugar added to it. I eat carbs in veggies and berries (the only fruit I eat on a regular basis) but other then that I eat very few carbs. I hear a lot that it is very bad to cut out entire categories of food, but for me it has made a huge difference for my illness.
I still find a lot of good food to eat, I just have to be very careful.

Lisa that sounds rough. Do you mind if I ask why? I don't eat gluten, but there are a plethora of carbs and grains still available to me. It seemed challenging at first, but now I find that its a very natural way of eating.
Laurie I'm having fun picturing all sorts of foods in bundt shape. I just ate leftovers after we got home through the snow from the "spring" fair (where the only food option was bake sale stuff or pizza ~ which fed my family but not my GF self, ~ I will say having any sort of restriction is great for ones health but can be very annoying socially) anyway, Im loving the image of little shrimp/bean/rice molds. Delightful. Do you think that they could somehow make ketel and club bundts? Like one would find in a punch bowl? Ah, if only vodka froze you could actually make vodka bundts and just float them in your club soda. Amazeballs. Bottoms up everyone.

So i just came back from a long day of retail therapy! Ahhhhh
Well first we went to pick out our piggies. OMG they are so stinkin(figuratively) cute when they are little!
Then I went with my SIL down to Freeport for a little shopping. I hit the Gap Inc. trifecta. Got some great stuff at the Gap and Banana Republic outlets and hit the Old Navy on the way home. I got a cute spring/summer everyday dress and a denim mini skirt among other things.
Fun day...Just need some warm weather to come along so i can wear some of it!
Melis -- how about Jell-O shots in mini bundt form? Is that what you're looking for?
Kim -- we had SNOW today!!! It was nuts. Shopping sounds fun.
We ended up having a fun day. I started out the day at yoga and I"m getting really good at my headstand! My dad & his husband came to take us all out to lunch. We trekked out to the Container Store and we all got something fun, and then I set up the third Harry Pottery movie for the kids while I made Meyer lemon cookies. Sweet!
