    Both. If you leave the country at all, you need a passport now.

    Laurie, if you haven't done the reduction yet, I'd say the 2-quart pan is an excellent size. Use your smallest burner because you'll have more control over the heat than on a larger burner. I wouldn't say VERY low but more like lowish-medium. You want a really good simmer but not too much rolling which will create foam. When I do wine or balsamic vinegar reductions, I just boil the heck out of it for a few minutes, so reducing soda was a very new experience. I'd love to see the recipe you're doing!

    Bugger. We will be very close to the border and I thought it would be fun to take the girls to the Canadian side. I have been to the US side many times, but never the Canadian side. DH and I both have passports, but not the girls.

    It might cost you a bit more, but I think you should be able to get passports within two weeks if you have travel planned.

    I did the first one tonight, for the cupcakes. Frosting also requires a reduction, I'm making that tomorrow. Thanks so much, I ended up on medium/low and watched it like a hawk and your water suggestion was perfect.

    Here's the recipe: Root Beer Cupcakes With Cream Soda Frosting - Will Cook For Smiles. I left out the almond extract because it's gross.

    Whenever something calls for almond extract, I use amaretto instead.

    I don't like amaretto either. Same issue. Dave & smelled the almond extract and discarded it immediately.
