    Cook it, puree it and then save it for sauces like spaghetti sauce. I love doing that.

    I also have a zucchini, summer squash and tomato mix on my pinterest board....I"ll have to find that.

    If you want a not so good for you treat...slice into rounds, dip in egg and then bread crumbs and then fry in small amount oil. I LOVE to dip it in salsa too.

    Hmmm. I might have to try this. (Although, frying it defeats the point of trying to eat healthier by having vegetables. No worse though than the zucchini brownies I just made...)

    haha it does. I'm not a huge zucchini fan but we treat ourselves to this about once a summer. It doesn't deep fry if that helps to justify it a bit .

    The cake seems a lot like the brownies I made last night (although I put frosting on top but did not use chocolate chips). I had the same problem that the recipe said 30 minutes but it took more like an hour.

    Yeah, it took forever. But worth it! Super delicious. I also used yogurt the next time I made it instead of applesauce and it came out better and cooked a little faster. I prefer baking with yogurt to applesauce in general, unless it's a small amount of applesauce.

    I plan to try more recipes this summer. A friend highly recommends this one:

    So I posted a few weeks ago that I was interviewing for a position. I hadn't heard anything and thought it was going to be a no. Surprise! I got the job! I accepted today and best news is that I can continue working from home! It's a decent promotion and I'm looking forward to this new chapter/role at my job.
