    I Love the zoo!! We go whenever we can!

    We are on our way out of town this friday to see Tom's parents in Rhode Island. So I'm busy packing and cleaning, and finishing stuff up to take a couple days off from work.

    Ugh Kim, I hate the time change. It always affects me, and it was worse than usual this year. Grrrrrr!

    On a side note, tomato and sausage risotto sounds amazing.

    Melissa - congrats on your hubby being almost done with school! That is so exciting.

    Kyla - Yay for moving to a great new place, although I'm sorry that Rob isn't up to full health and can't help you. I hope he feels better soon!

    I have a busy day today. I am working this morning, and then this afternoon (after 2) I have to run to the grocery store, go pick up my brother and take him to work because his car is in the shop, and then go to my weekly OB appointment. Everyone keep everything crossed for me that my blood pressure is reasonable. At this point I think DH is rooting for another high reading because he's all anxious for the baby to be born STAT, but I'm still not wanting to be induced. So everyone send low BP vibes my way.

    Tonight I'm making cabbage rolls stuffed with sausage, brown rice, sauteed onion and mushroom, and topped with a tomato/balsamic vinegar sauce. Oh man, my mouth is watering just thinking about it. I call it "Pizza Rice" so T will eat it. LOL Trying to decide between steamed broc and making a salad for the side.

    Alissa, the risotto recipe is an Everyday Food recipe

    Tomato and Sausage Risotto - Martha Stewart Recipes

    Its good! But if you do it, use diced tomatoes with no salt added, and use unsalted butter, and don't season too much with salt or else it is REALLY SALTY. I learned that years ago...and this time around, pretty much the only salt that was added was in the parmesan and that was much better.

    Tonight is leftover night for us. I have plenty from the last three evenings. Kids can pick whatever they want.

    We dont do daylight savings here, and I love it! I do like winter better though, cause we are on Alberta time so it makes it easier to go to our closest big centers for shopping. Plus, then I am right between my parents time in BC, and my sisters time in Sask, so I can call them both without worrying too much about the time difference. I can never remember who is behind and who is ahead of me

    You guys cook such yummy things. Our dinner last night was pancakes with eggs and bacon. Tonight I am planning Nachos, or maybe I will make chili and biscuits since it is snowing and yucky out today. I had to shovel about a foot of snow this morning! I dont mind though. I think that finally after 5 winters here I am starting to acclimatize. I really havent hated winter yet this year

    OH, Melissa! I am so happy for you that school will be done soon! I hate when DH does a course for a week or two......I cant imagine how this has been for you.

    I've been looking for something to do with my leftover xmas turkey, so tonight we are having this:
    bite this goodie: Cannelloni with Turkey, Ricotta and Roasted Pepper | Cannelloni z Indykiem, Ricott
    I'm using chopped turkey instead of ground and using cannelloni tubes instead of lasagna noodles.

    Kim - Thanks for the recipe and the tips! I will definitely try that recipe soon once I am able to eat a big bowl of risotto again!

    Lisa - Your cannelloni recipe sounds really good too - I love that it has nutmeg in it! I am a big fan of a dash of nutmeg in otherwise savory foods. That's another one that will have to go on my "to try" list once I'm allowed to eat a bunch of carbs again.

    Kyla - I'm impressed, shoveling snow is hard work! I usually leave that for DH and T (okay, T doesn't do much of the shoveling, but he loves to go out and "help") even when I'm not huge and pregnant.

    I love brinner! (breakfast for dinner) AGAIN when I'm not watching my carbs like a hawk, I LOVE to make french toast with bacon and fruit for dinner. DH and T love it too. I think I'm just hungry because all this food talk is making me VERY hungry. LOL

    Alissa, I have a yummy potato leek soup with dill recipe that has nutmeg in it. It's divine. But, higher in carbs than you'd probably like from the potato.

    Kim, I totally agree about using salt-free canned tomatoes and unsalted butter. I'd rather have control over how much salt goes into our food. There is SO much salt in canned tomatoes. It's sick.

    I received a letter stating:

    To The Parents of Jace ----,

    Your child's teacher has nominated your child for recognition in our school wide ABBY behavior program. This means during the past month, your child has demonstrated exemplary behavior at school with regards to ABBY expectations:
    A- Act responsibly
    B- Be safe
    B- Be respectful
    Y- Yes, you can do this!

    ....."

    And there will be a short celebration that I will attend and he will receive a certificate. They will also put a picture of him in the display case in the entrance of the school. I was smiling ear to ear when I read the paper, I am SO proud of him!!
