This is a tough thing to answer. He doesn't like much of anything I offer him. Right now, my saving grace is Luna Bars (yes they are marketed towards women, but my doc says it's okay cause it doesn't have hormones in it. They are dairy free protein bars and he calls them "cookies".

He eats scrambled eggs and toast with vegan butter for breakfast (IF he east breakfast), or steel cut oatmeal with vegan butter, a sprinkle of brown sugar, raisins and walnuts cooked in. Oh, and bananas are a favorite right now for him and if I let him he'd eat 3 or 4 of them a day.

For mid morning snack he usually just steals from whatever I'm munching on. Apples, Peanut butter, Luna Bar.

Lunch is whatever I can get him to eat from the following choices, tuna, canned chicken fixed like tuna, egg salad, peanut butter sandwich.

For dinner we usually pan cook cubed chicken in olive oil and add some spices (basil, and thyme mostly). We usually have brown rice (he won't eat that) and steamed veggies (it's a fight for that as well)--usually asparagus and yellow squash.

We haven't done tacos or burritos in a while cause I don't like them without the cheese and sour cream (and our taco seasoning has whey (milk) in it and Evie wasn't pooping even with that little amount), but he does like to eat re fried beans and taco meat by the spoonful. He won't eat taco shell or tortilla, so we'd just give him the innards of the burrito on a plate (with tomatoes and olives and avacado).

He's pretty hit and miss on what he will and won't eat, but knowing that he will always eat a luna bar when offered and he eats half a luna bar twice a day (most days) gives me a little peace of mind that he's getting SOMETHING.

I bought him almond milk today and am going to slowly cut out the others. He does love veggies, especially broccoli and cauliflower. Eggs and sausage are a big hit with him too. And he can't get enough fruit. He had a rough night last night and a horrible day today, but he had yogurt before bed. So no more yogurt. There is seriously milk in everything. This is going to take some work and we are pretty rural, so I don't have a ton of choices, I looked for vegan butter tonight at the store, but no luck. Olive oil here I come! He had very little dairy today and has been sleeping soundly for about 2 hours, which in this house is much better than the norm. If I come across any good recipies I will definately share.

Just a question, is this a milk allergy you are dealing with?

As for a butter replacement we use Becel margarine on most of our foods, its a vegetable based margarine. We only really have to deal with Lactose intolerance, and it is DH who has the issue so medication does the trick.

If they like tacos you could try making a chili, mine contains ground beef, canned tomatoes, 2 types of canned beans (black and kidney), salsa, sweet or cubenelle pepper, chili powder and jalapeno (optional, we skip this when doing potlucks). My girls LOVE it, and the 12 year old is PICKY!

It's made in a slow cooker so can be prepared the night before.

2 lbs - Lean Ground Beef
6 - Tablespoons Chili Powder
2 - 3 Cubenelle or Sweet Peppers (this depends on size and really how much pepper you want)
1 - Jalapeno Pepper (Optional)
1 - 28 oz Can of Tomatoes
1 - 15 oz Jar Herdez Salsa (you can use your favourite brand instead)
2 - 14 oz Can of Black Beans
1 - 14 oz Can of Kindney Beans

1) At medium heat brown ground beef, drain off fat and add 2 tablespoons of Chili Powder cook for another minute then add to slow cooker.

2) Chop Peppers and add to slow cooker.

3) Add Tomatoes and Salsa to slow cooker.

4) Drain and Rinse Beans and add to slow cooker.

5) Add 4 tablespoons of Chili Powder

6) Mix well.

7) Turn Slow Cooker to low and cook for 8 hours, or high and cook for 5 hours.

Makes about 8 adult portions.

You can top this with cheese for anyone that can have it, goes well on nacho chips too.

The butter that we use is Earth Balance original buttery spread. It's in the organics/natural section.

Amanda, that chili sound delicious! Will have to try it when we get back from Christmas Vacation.

We are at MIL's for Christmas and she's been giving Daniel milk (lactose free) and cheetos and other dairy filled snacks and while he didn't have any night terrors last night, he's certainly tossing and turning a lot. and his diapers are atrocious! It's a good thing she works the next 5 days. Gonna REALLY limit his intake while she's not here. Gonna have to talk to her seriously later. :dry:
