BBQ Cups
Ingredients
2 tubes round crescent rolls
1 pound hamburger
1 small onion
1 cup BBQ sauce
Cheese (as desired)
Directions
Heat oven to 350.
Brown beef and onion together in skillet. Add BBQ sauce and let simmer for 5 minutes. (I make my own BBQ sauce)
While meat in simmering press the crescent rolls into muffin tins, bringing the dough up along the sides.
Pour beef into each cup filling only to the top of the roll. Bake for 15 minutes. Remove from oven and top with cheese. Bake for additional 5-7 minutes.
We made these last night...the kids liked them, they were fast and easy, and there were pleanty of left overs! BONUS, Lexi was able to help press the rolls into the muffin tins.

Aunt Peggy's Sweet Potato Souffle

Serves:4 to 6 servings.
Ingredients
Souffle:
3 cups cooked and mashed sweet potatoes, from about 2 to 3 small baked potatoes
1 cup brown sugar
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
2 tsp cinnamon
3 eggs, beaten
1/2 cup milk
8 tablespoons unsalted butter, about 1 stick, melted
1 tablespoon vanilla extract
1/2 teaspoon salt
Topping:
1 cup packed light brown sugar
4 tablespoons unsalted butter, about 1/2 stick, cubed, at room temperature
1/2 cup self-rising cake flour
1 cup chopped pecans
Directions
Souffle: Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish.
In a large bowl, combine the sweet potatoes, sugar, spices, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish.
Topping: Combine the brown sugar, butter, flour, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.
Bake for 20 to 25 minutes, until the topping is golden brown. Serve hot.
*** Make sure you BAKE and then mash the sweet potatoes. If you boil them the casserole will become watery after baking (I learned this the hard way this year)

CrockPot Salsa Chicken
Ingredients
4-6 frozen chicken breasts
1 Jar salsa
1 can black beans
1 can corn
1 cup cheddar cheese, grated
rice, hot cooked
Directions
Place chicken in crockpot and pour salsa over chicken.
Let cook for 4 hours on high or 8 hours on low
Add black bean and corn
Let cook for another 15 to 20 minutes
Serve over rice, top with cheese.
Taco Ring Recipe:
Ingredients:
1 pound ground beef, cooked and drained
1 package taco seasoning
2 tubes of Crescent Rolls
Toppings: lettuce, tomatoes, cheese, pico de gallo, taco sauce, sour cream, Western dressing
Directions:
Cook and drain ground beef.
Mix with taco seasoning, like you would for regular tacos.
Lay crescent rolls out on a large stone or cookie sheet, with narrow end facing out, creating a circle.
Spoon taco meat onto crescent rolls.
Fold over crescent roll ends, forming a circle.
Bake at 375 degrees for about 20-30 minutes, or until golden brown.
Serve with toppings of your choice.
Chicken Crescent Squares
1 (3 oz) package cream cheese, softened
3 Tbsp butter, melted and divided
2 cup chopped cooked chicken
2 Tbsp milk
1/8 tsp pepper
1 can refrigerated crescent rolls
3/4 cup seasoned croutons, crushed
Preheat oven to 350.
Combine cream cheese and 2 Tbsp butter; stir in chicken and next 3 ingredients. Set aside.
Unroll crescent dough, separating into 4 rectangles; press perforations to seal. Spoon 1/4 of chicken mixture into center of each rectangle; bring corners of each rectangle together over chicken mixture, and twist gently to seal.
Brush packets with remaining 1 tablespoon of melted butter; dredge in crushed croutons and place on an ungreased baking sheet. Bake uncovered for 20-25 minutes or until golden brown.
I found this on Pinterest. I've never tried it...but it sounds yummy!
SNICKER SALAD (tastes like a yummy caramel apple with nuts and chocolate) Ingredients: Cool whip, one package of instant vanilla pudding (small box), one cup of milk, Snickers (frozen or cold - easier to chop), green apples (tart, with a little sweet and lots of juicy). 1) Add instant pudding into mixing bowl and pour in 1 Cup cold milk. Mix well and let chill while chopping candy. 2) Chop Snickers bars into bite size pieces. I have added Milky way bars and Rolos before. You can always leave out the Snickers bars if you have a nut allergy. 3) Chop green apples into bite sized pieces (I use about 8-10). 4) Fold in one 8 ounce container of Cool Whip (or more if you think it needs more. I usually buy the 16 ounce container just in case) into the pudding. 5) Combine candy and apples in bowl with pudding mixture. 6) ENJOY!! Be sure and control yourself or you might just eat the whole bowl yourself!
