Okay... I have my baby party planned for May 7th. I also have a shower my mother and godmother are doing on the 14th for the older family and friends on my parents' side.
The party is at my house. I sent out about 36 invites... some for couples. I did it so they all arrived about 3 weeks before the party. I asked for rsvp to my email. So far I have only heard back from a few people. I know of 8 people for sure that will be there ( 2 are sets of couples) so that is only 6 invites I have heard back on. I have no idea how many people will be there and it is making it really hard to plan food, amount of plates, chairs... etc. I also don't know whether just to by beer or get a keg... depends on the amount. How do I manage this. It is REALLY stressing me out because it is only a week away and I want to get the planning finished this weekend and buy any non perishable items.
I also need help with the menu. It will be casual and I REALLY want things that I can prepare the day before or that don't create a mess. The party is at 230, and it takes me forever to get ready and look good lately. I was thinking of doing a nacho bar because everyone likes nachos.... so having a big crockpot of velveeta/rotel, have chips, onion, olives, salsa and sourcream (anything I am missing there?) It that totally tacky? My husband thinks I should have a second crockpot with chili in it for the nachos as well.... I don't want to make it from scratch though (I don't care how easy it is, just don't want the stress or mess).... so I didn't know if it would be totally lame to have canned chili. Anyway.... what other foods should we have out if we do nachos that are easy to prepare???
I thought this would be a good idea, we really haven't had everyone come see our new house yet, but with not knowing how many people will be there, and with me being such and epically bad planner I am a wreck this morning!
