Healthy meals and snacks!

Hello!
I'm trying to eat out MUCH less and get back into cooking more. Does anyone have any healthy meal recipes or snack ideas that they want to share?

Right now I have apples, oranges, almonds, cut up veggies, and cottage cheese that I've been snacking on, or combining a few for a filling lunch. Usually I cook healthy things, but I'm running out of ideas... Eating healthy is so much easier for me in the summer when there's so much goodness in season!

Cut up 4 Avacado, 2 tomatoes, and some green onions. Give it a pinch of salt, peper and ground up garlic.
You can add some lime juice too... its AMAZING!!

YUM, that sounds good to me...but my problem would be I'd eat a bag of tostido chips right along with it! Not so healthy anymore! Smile

I plan all of our meals a week in advance (on the weekend, then we do our big "shop" on Sunday and then just eat what was planned for the week....)

I can share what we ate this week:

Cheese ravioli w. tomato sauce
garlic bread
wilted spinach

bean and cheese stuffed enchiladas
green salad
brown rice

homemade pot roast (beef, carrots, potatoes, onions, etc.)

baked pork chops
steamed broccoli
quinoa

Tonight we'll use the leftover pot roast to make homemade Italian beef sandwiches, baked sweet potato fries, peas

Friday is our indulgence take-out night.

For work each day I pack my day of snacks-- they usually include a protein shake, cheese cubes, nuts, cottage cheese, etc.
