What's for dinner?

Today I have been a busy bee in the kitchen. DH has been gone since 7 am and won't be home for supper, so it's just me and the kids all day. I made a loaf of bread in the breadmaker, 5 dozen snickerdoodles, and now I am anticipating some yummy potato skins for supper Smile

The key to my happiness is my stomach Wink

We've been working around the house all day, so it was a leftover night. Goulash for me, pizza for DH and DS Wink

Ain't nothin' wrong with leftovers! That's what we had for lunch. I feel bad making potato skins when DH won't even be here.....I better save him some...

I got a little industrious tonight and have homemade chicken pot pie in the oven. This week has been so busy! I feel like we have eaten leftovers all this week, and DH is in the field so there is no going out! Next week won't be any better either, probably worse! Who knows what we be eating next week...

Dh had my leftovers from chilis and I had a sub. Been getting sick alot lately (chilis was the worst) so I know I can usually keep down, waffles, cereal, and subs.

A friend of mine just posted on FB that she was craving a burger with bacon on it.....and now so am I. Even though I just ate like, 15 snickerdoodles.

We don't cook Sat night - DD and myself ate whatever we could find at my mom's (salad, strawberries and a mango for me, and avocado, egg, potato croquet, and cashew cheese for DD). We were giving DH the afternoon off, so he scrounged around the house for some food that we made yesterday (we cook for Friday night dinner and Sat lunch/night all on Friday for religious reasons). Then after DD finally fell asleep we had late night pizza (for DH) and fries (for me) since it was already well after 10, and I had eaten at like 6:30 and was starving.

I've been trying out some new recipes lately. Last night we had "No potato, potato salad." Basically it had cauliflower in place of the potatoes, and then there were hard boiled eggs, celery, onion, pickles, mayo and mustard. We also had Tuna stuffed eggs with it. Tonight we are having stuffed green peppers in the slow cooker (they have beef, pork, cauliflower, carrots, onions, diced tomatoes, and garlic).

I am making up a random recipe tonight. I knew I wanted to do chicken and rice, but other than that.....I am just winging it.

I cooked up the chicken breast in greek dressing, and now the rice is cooking in chicken broth with fresh tomatoes, garlic, and some other herbs. Hopefully it will be decent.

I have to deal with my DS1 being UBER picky no matter what I make (he doesn't even like Kraft Dinner) so I just stopped trying to please him Smile I know he will give me a big "UGH!" when he sees the rice tonight.

finally went grocery shopping and now no one in this house is hungry, go figure. All want is chicken tenders with buffalo sauce, lol! (restrained from buying them, but did buy a cake, lol!)

Going to try to make this chicken carbonara they were sampling at the store tommorrow night.

Facebook has been bombarded with people reposting awesome recipes.. I've been giving those a whirl.. Tonight was Cheddar Cheese Broccoli Chicken..

If someone wants the recipe, LMK.. I copy and save them into a Word file until I'm ready to try them. Biggrin

Tonight was a weird food night. Tonight would have been the last night for the 'spaghetti that never ends' but since I spent all evening with indigestion yesterday DH agreed he'd finish the spaghetti. I'm trying to get my iron so I made a massive spinach salad with mushrooms, bacon and hard boiled egg on top along with my favorite spinach salad dressing (oil, red wine vinegar, ketchup, sugar, onion). It was SO good. Apparently you need vitamin C along with spinach for the iron to get properly absorbed so I had OJ with it too. DD had bacon, cheese and she ate some of my spinach too. LOL. She has never tried spinach but she liked it.

Oh man, I love that spinach salad. I hope it doesn't upset my tummy.

Tonight I did French Toast. DH isn't home at all on Monday's and he doesn't like french toast, waffles, or pancakes, so we usually have our "breakfast for supper" on Monday's.

I had mine smothered in syrup with some fresh strawberries Smile

I also made homemade granola bars today for the first time. They were not too difficult and really yummy! I'd love to start making my own instead of buying them on a regular basis.

Last night we had spaghetti with garlic bread and green beans.
Tonight we had curried chicken salad sandwiches with broccoli and blue corn tortilla chips.

I never get them at restaurants because I like my recipe best. LOL. It's more savory than sweet. Most of the recipes in restaurants have fruit in them and sweet dressings.

BOOOOO that you can't handle oranges. I'm still ok with them...but time will tell.

Tonight hubby made dinner when I had DD at ballet. Halibut, rice-a-roni, baked beans and corn. He made sure everything had iron in it. Aweeeeee!

Me too. There used to be this awesome spinach salad at Hudson's when I was growing up. Spinach, bacon, mushrooms, tomatoes(but I don't eat those Wink ) and a warm bacon dressing with blue cheese sprinkled on top!

I made the chicken carbonara (ish) dish, but I'm the only one that ate it, lol (DH was 'sick' and DS wouldn't touch it because it had peas) It was yummy, but now I have leftovers for the next 3 days at least.

Tonight is tuesday which is ALWAYS tacos, lol! DS LOVES Taco Tuesday

Reading all these posts about food has made me hungry!!
My DH isn't a big veggie eater - he wants meat and some kind of starch, usually potatoes. He doesn't like salad. Since I've been pregnant, I'm not a big fan of hamburger. I can't give him anything weird (like someone had mentioned blue tortilla chips, he won't even try them)... so I get stuck in a rut a lot of times for dinner...

I get stuck in a rut too. DH is a diabetic, so he's not your average "man" who likes "man food". He's also trying to watch his cholesterol, and he doesn't like to eat very much meat - he went full-out vegetarian for a year. Now he eats meat occasionally, but I am the meat-lover in this house! I never know what to make him for supper. I LOVE carbs and he can't eat too many carbs because they just turn into sugar.

I wish I liked salad more......LOL.

I love salads and am a big fan of spinach salad too. That one from Hudson's sounds wonderful! I don't like sweet stuff on mine too much either and prefer savory. The only thing I would add to the one with bacon, mushrooms and tomatoes is a hard boiled egg. Yumm!

I'm having a taco salad from Taco Bell for lunch right now. Such a healthy choice....Not!! :rolleyes: It is good though. Wink
