on this thread you can post your recipes for quick meals - we're all so busy taking care of baby that grabbing good food can seem difficult at times...
please share your fave quick recipes we could all use them
This is a SUPER easy recipe that tastes really good. I've even made it for company!!
1 pkg. refrigerated tortellini
1 cup grated Parmesan cheese (fresh, not the crumbly stuff in the can!)
1 cup whipping or heavy cream
8 slices of bacon, cooked (or if you are really in a hurry, 1/2 c. real bacon bits)
handful of fresh or dried parsley
Cook tortellini according to package directions. In a small saucepan, combine parmesan cheese, cream and bacon. Bring to a boil, then lower temp. to med. and simmer for 7-8 minutes until blended. Add parsley and simmer another minute or so. serve sauce over tortellini. VERY RICH AND YUMMY!
#1) Kristine's Lazy Stew Chicken
1 pk boneless chicken breasts or thighs
Chinese soy sauce
Chop up chicken into large chunks and put in a large bowl and add about 5 pieces of garlic (crushed and chopped). Then sprinkle a few dashes of black pepper and several dashes of chicken seasoning. Add Chinese soy sauce (a good amount, so it's almost like a marinade but not too much). Then mix it all together and put into a small frying pan comtaining about a 1/4 inch of oil. Cover it on low heat and stir every now and then. It takes about an hour to cook! Serve with rice or a baked potato and a salad.
#2) Steak & Potatoes
Slice steak into thin strips and sprinkle black pepper. Put into small skillet with 2 tbsps oil and 3 cloves of garlic, crushed and chopped. Cover and let simmer for 30 minutes (stir every now and then). When almost dry (only a small amount of liquid/oil is left) add half a chopped onion and half a green bell pepper, chopped into small pieces. Then add a few dashes of ketchup, meat sauce, and Chinese soy sauce. Stir for 3 minutes then serve with a baked potato (just pop them into the oven until cooked).
This is SO yummy - the steak comes out very saucy and the onions and bell pepper add a nice crunch
Bottle BBQ sauce
Bag frozen italian meatballs
Put meatballs in crock pot and cover with entire bottle of sauce. Cover and turn crock pot to high and walk away for 2 hours, stir and serve.
#1) Crock Pot Ribs
Place ribs in crock pot
add a botle of BBQ sauce
cook on low for 6-8 hours and serve over minute rice
#2) Crock Pot chicken or roast
place meat in crock pot
add 1/2 cup water
add baby carrots and 1/4'd potatoes
seasonings to taste
cook on low for 7-8 hours or high 5-6 hours.
#3) Simple lasangna
Mix thawed chopped spinach with a tub of ricotta cheese
layer this mixture with canned tomato sauce and either no-cook noodles or fresh noodles.
top with grated cheese
cook to package directions (fresh pasta is 35 minutes covered in a 350 degree oven)
#4) Easy Tuna casserole
Cook a box of kraft dinner according to directions, add a can of drained tuna and a can of drained peas.
Make Lipton sidekick sourcream and cheese noodles according to package directions. add tuna and peas. Top with grated cheese and serve.
#1) Easy Chicken Pot Pie
Par boil 1lb -1 1/2 lbs boneless chicken
Line pie plate with refrigerator pie crust
In large bowl mix 2 cans cream of chicken soup and 2 cans vegall (mixed veggies w/ potatoes)
cut chicken into bite size pieces and mix with other ingredients
pour mixture into pie crust and cover with other crust, pierce crust with fork
bake at 350 degrees for 45 minutes
#2) Monkey bread (don't make this if your on a diet)
3 cans of pillsbury buttermilk biscuits
a stick of butter
a half cup of brown sugar
cut each biscuit into quarters
put sugar in a bowl, then mix in enough cinnamon to make it a light sand color
roll each biscuit piece in the mixture then toss it into a bundt pan
melt butter and combine with brown sugar
gently pat down biscuit pieces then pour butter mixture evenly over top
bake at 350 for half an hour
turn monkey bread out of the pan and pull apart to eat
This stuff is totally addictive
#3) Oreo Truffles: these are super easy, I'm making them, along with several other candies as xmas gifts
1 bag of regular oreo's
1 package of cream cheese
1 or more of the following for rolling or dipping them in: sprinkles, powdered sugar, melted white chocolate, finely chopped nuts
Crush the oreo's well (i do them in a food processer to get them really fine), add cream cheese and knead together, use a teaspoon for correct size then roll each portion into a ball, then either dip in melted chocolate using a toothpick, or roll in a topping, refrigerate until set.
Teriyaki Chicken and Brown Rice
1 pound boneless sirloin steak (cut into strips)
2 cloves garlic (minced)
1/3 c. Teriyaki sauce
4 c. broccoli
1 red pepper (cut into strips)
1 1/2 c. water
2 c. brown rice (uncooked)
Heat 1 tblspn oil in pan. Add garlic and steak. Cook steak to medium done. Add water and teriyaki sauce. Cook to boiling. Add broccoli, red pepper and rice. Cook to boiling, reduce heat and cover. Simmer 5 mins. Let stand 5 mins. Fluff with fork.
This is super easy and fast, and REALLy good
#1) Crock pot meatballs
1 or 2 bags precooked meatballs
1 jar chili sauce
1 jar grape jelly
Mix chili sauce & jelly, pour over meatballs in crock pot. Serve when hot with rice.
Can also be cooked in the oven in a baking dish or on the stove top in a pot.
#2) Easy chicken bake
boneless skinless chicken breasts
basil, parsley, garlic, pepper, salt
mix oil with herbs/spices, add to potatoes and toss
place chicken breasts in a casserole dish, put veggies in on top and cover.
Bake at 350 for an hour.
This is simple and fast and is loved by all ages. I used to make it for my daughters teen friends when they came over:
Brown a pound of hamburger meat (brown with a littl onion if you prefer)
Mix it with your favorite bar-b-que sauce
Grease the inside of a cupcake pan
Use pop-n-fresh biscuits
stretch them out a little and put on in the bottom and kind of sides of each cupcake hole.
Put a scoop of the bar-b-que mix into each biscuit
cover with your favorite shredded cheese
Bake for 10 minutes at 400
Eat and enjoy.
#1) Baked Chicken (feeds any number of people)
Spread any number of pieces of boneless or bone-in chicken on the bottom of a cake pan. Top with your favorite salad dressing(s) until covered. (I like half ranch and half Italian.) Add a handful of your favorite olives (optional). Bake in 350 degree oven for approximately 20-35 minutes (boneless) or 45-60 minutes (bone-in). Check for doneness with the tip of a knife. Chicken is done if the meat is white (or dark meat is light brown) and juice is clear.
Variation: instead of olives, spread salsa on top of the chicken.
#2) Quick and Easy Baked Potatoes
I always bake them this way, because otherwise they take too long. Poke holes in potatoes with a fork. Take one potato, wrap it in a damp cloth napkin, dish towel or paper towel. Microwave for 5 minutes (4 minutes for small/medium). Unwrap, set aside and microwave the next one. When they are all microwaved, put them on the grill or broil in the oven until they are as brown as you like them (approx 5 minutes). Top with salsa, and you have a tasty low fat meal.
#3) BROWN SUGAR AND CINNAMON OATMEAL
Melt 1/3 c. margarine in the microwave. Add 1 c. brown sugar and 1 Tbs. cinnamon. Mix well. Keep in the refrigerator. Whenever you make oatmeal, add a tablespoon of mixture to the bowl of oatmeal for brown sugar and cinnamon flavored oatmeal at a fraction of the cost of flavored instant oatmeal.
#4) I tried the crock-pot salsa chicken someone posted a long time ago, and it was fantastic! I jazzed it up a little. Here's my version:
4 chicken breasts (boneless, skinless)
1 large jar of salsa
1 bottle of beer
Juice if 1/2 lime
2 TBS taco sauce
Cook in a crock pot all day, until the ckicken falls apart. Serve over rice, on a sandwich, or just straight. Yummy!
This is one of my absolute favorites!!
1 1/2-lb salmon fillet, cut in 4 equal pieces
2 pkg (3.6 to 4 oz each) roasted garlic mashed potatoes
1 1/2 lb thin asparagus, woody ends snapped off
1 Tbsp oil
1/2 tsp each salt and freshly ground pepper
salmon-asparagus- Heat oven to 425°F. Line a large rimmed baking sheet with nonstick foil.
2. Place salmon pieces 1 in. apart in center of baking sheet. Reserve 1 cup potato flakes from 1 package. Sprinkle remaining flakes from that package on top of salmon.
3. Arrange asparagus around salmon. Drizzle all with oil; sprinkle with salt and pepper. Bake 12 to 15 minutes, turning asparagus once, until salmon is opaque in center and asparagus are crisp-tender.
4. Meanwhile, put the reserved 1 cup and remaining package of potato flakes in a 2-qt microwave-safe bowl. Add 31/2 cups water; cook in microwave as package directs.
This is soooo easy and pretty good I think-
2 - 13oz cans of chicken breast in water
1 cup Salsa
1 - 4oz can chopped green chilis
2 1/2 cups heavy whipping cream
2 cups shredded Monterey Jack Cheese
10 - 8" flour tortillas
1. Combine salsa, chilis, and chicken.
2. Place mixture in tortillas and wrap/roll.
3. Place seam side down in 9 x 13 baking dish.
4. Pour whipping cream on top (I also poured a little extra salsa on top as well but not necessary).
5. Bake for 45 minutes at 350.
6. Sprinkle with cheese on top with 5-10 minutes remaining on cook time.
This is a really easy and tasty way to do tacos~
Taco Cresent Rollup
1 8 count refrigerated cresent roll
stuff for tacos
1. Place the cresent roll triangles in a circle on a pizza stone or other round pan with bottom corners touching
2. Prepare taco meat as directed, add onion and shredded cheddar cheese to taste (and black olives if you like them)
3. Place small amount of taco mixture on each roll and turn third corner over to touch the bottom of the ring. There will be space between each ring-as the cresents rise, it will get closer together
4. Bake at 375 for 20 min or until cresent rolls are done
5. top with Taco stuff (lettuce, tomato, more cheese, sour cream...)
*I also make this receipe with cut up ham, cheese and broccoli sometimes*
#1) Roast Chicken and potatoes (Takes 15 min plus roasting time)
Make tons and enjoy the leftovers!
1 whole chicken
salt & pepper
sweet or regular potatoes
thyme or rosemary
veggies or salad
Set oven to 325. Rinse chicken then put on roasting pan. Pour on some oil, salt and pepper and rub into chicken to coat it. Put in oven with a meat thermometer or look up roasting times on internet.
Wash and chop potatoes into cubes. In bowl, stir with some oil, salt, pepper and thyme. Spread on baking tray. Throw in oven about 45 min before chicken is done, flipping once.
Add some veggies to meal (canned, frozen, salad, leftovers, whatever)
Chicken is done when juices run clear (cut into the thickest part to test - should not be pinky)
#2) Roasted Tomato Penne (prep 10 min, bake 2 hours)
completely foolproof, cheap, healthy and will totally impress your inlaws
8 plum tomatoes
6-8 cloves garlic
3/4 cup fresh basil leaves
1/4 cup olive oil
1 1/2 cup crumbled feta (optional)
Penne pasta (enough for 2 people, 1 1/2 cup approx)
Set oven 350. Cut tomatoes in half length wise and line the bottom of a casserole dish, cut side up. Coarsely chop basil and garlic, mix with oil, some salt and pepper. Spread mixture over tomatoes, cover, place in oven 2 hours. Cook penne in the last few minutes.
Remove tomatoes; add feta. With 2 knives, give the mixture a good choppity chop to cut tomatoes into pieces and combine.
Put some penne on plate, pour some tomatoes on top. Add a sprig of fresh basil on top to really impress your inlaws.
I got this recipe from allrecipes.com and it's been a big hit!
#1) Chicken Hurry
1 onion soup mix packet
1/2 cup ketchup
1/4 cup brown sugar
1/2 cup water
Mix together. Pour over chicken (whole, breasts, whatever) in a baking dish. Bake on 350 for 1 hour and serve over rice. May need to add more water to mixture, depending on how much liquid you like.
#2) Chicken Mozzerella
1 lb chicken breasts
1 jar spaghetti sauce
1 8 oz pkg shredded mozerrella
1 pkg spaghetti or preferred pasta
Bake chicken in the oven at 350 until done. You can season the chicken before cooking if you like, however you like. Cover chicken with jarred sauce and cover sauce with cheese. Bake until cheese is melted and bubbly. Serve over spaghetti.
**I also have to rave about Reynolds roasting bags. You can throw a whole chicken in, bake for an hour and half withour worrying about basting or anything, and it comes out so moist and good!
The only pot roast I make is the McCormick Bag and Season version. You throw cut up veggies (potatoes, carrots, onions) into the bag with the roast, and then pour in the season that comes with the kit. Bake for 2 hours. My husband LOVES it and it's so easy.
#1) Cheeseburger Meat Loaf
1 1/2 pounds lean ground beef
2 cups cooked rice
1/4 cup finely chopped onion
1 1/2 teaspoons garlic salt
1/4 teaspoon ground black pepper
1/3 cup milk
2 large eggs, beaten
6 slices pasteurized process American cheese
1/2 cup barbecue sauce
Combine meat, rice, onion, garlic salt, pepper, milk and eggs in large bowl; mix thoroughly.
Press half of mixture into greased 9x5-inch loaf pan; top with cheese. Spread remaining meat mixture over cheese, being certain cheese is completely covered. Spoon barbecue sauce on top.
Bake at 350 degrees F. 45 to 50 minutes, or until meat is done.
Let stand 5 minutes before slicing and serving.
Makes 8 servings.
This is a huge hit at our house- and believe me they're a picky bunch!!
#2) Chicken Parmesan ( easy)
6 chicken breasts ( boneless or rib in which ever you have)
1 can pasta sauce
2cups shredded mozzerella cheese
1/4 cup parmesan cheese( can stuff is fine)
bread crumbs...(about 1-2 cups)
Preheat oven to 425
Mix bread crumbs with parmesan
PLace in a FOIL LINED( for easy clean) pan
bake for 25-45 minutes ( depending on chicken type you used)
During last 5 minutes pour sauce over chicken and sprinkle Mozzerella cheese......
Serve over spaghetti noodles or rice...a nice salad goes well too
#3) Tater-Tot Casserole
My kids love this!
2 lbs. extra lean ground beef
1 can cream of mushroom soup
1 (2 pound) bag frozen tater tots
1 cup grated cheddar cheese
Pat ground beef into bottom of greased 13x9x2-inch pan. Spread soup over meat and cover with grated cheese. Top with tater tots. Bake at 350 degrees, covered for 45 minutes and then uncovered for 15 minutes.
#4) Husbands Delight~
10 ounces egg noodles

In a large skillet over medium heat, brown the ground beef. Add the tomatoes with juice, salt and sugar and simmer for 15 minutes.
In a separate medium bowl, combine the sour cream, cream cheese and onion and mix well. In a 9x13 inch baking dish, place half of the egg noodles, then all of the meat mixture, then the cream mixture. Top with the remaining noodles and sprinkle with the cheese.

#5) BEEF dip
4 pounds beef chuck roast
1 tablespoon minced garlic
1 tablespoon dried rosemary
3 bay leaves
1 cup soy sauce
6 cups water
Place roast in slow cooker. Season with garlic, rosemary, and bay leaves. Pour in soy sauce and water. Cook on low setting for 6 to 10 hours. Unlike most roasts, the longer the better.
I've made this a thousand times..so yummy!!!
#1) Three-Step Beef Stroganoff

#1) Here is a chicken alfredo recipe
You will need:
Broccoli (either fresh or frozen)
chicken breast (sliced)
Alfredo sause (I use a jarred brand but you can use whatever you are familiar with)
Brown the chicken in a large fying pan with the onion.
Put the broccoli in to cook and soften.
When the chicken is cooked and broccoli is cooked the way you like it, put in the alfredo sause to cook/simmer together for a few minutes.
while your chicken in cooking, boil the egg noodles to desired tenderness.
Add the noodles to chicken broccoli mixture.
Mix together until everything is coated with sause
It's done... eat and enjoy.
This is really quick to do to, especially if you buy the pre cooked pre cut frozen chicken strips. I would say 30 min tops.
#2) Risotto - I made up a 10 min or so recipe
2 c. minute rice
1 tbsp margarine/butter
1c frozen mixed peas/carrots
1 can mushrooms sliced
1 can cream of mushroom soup
1 piece garlic/ or garlic powder
1/2 to 1 c. milk
Cook minute rice as directed (this is where the 1 tbsp of margarine/butter is used) set aside - depending how you like your risotto, you might want to make your rice "softer" than normally would
In a frying pan, sautee together : ( I put a little olive oil to coat the pan) chopped onion, minced garlic (or add garlic powder later), mushrooms and peas/carrots. Cook until soft and how you like.
Add the cooked rice, mix through rest of ingrediants.
Add the can of cream of mushroom soup, mix and then add milk while mixing your rice. Add as much milk as need to get the creamy texture of risotto.
Add salt and pepper to taste.
Simmer for 5 - 8 minutes and enjoy!
If you are feeling adventurous add shrimp to the veggie sautee or scallops and voila Seafood Risotto.

pack of italian sausages - mild or hot
two green peppers - sliced
two containers of spaghetti sauce
spice - to your liking - i use red pepper, basil, salt, pepper, oregano
combine all ingrediants (except buns) in crock pot. set to high. cook for about four hours (i would watch it b/c it varies sometimes - set it too low if too long).
throw in buns and serve!
1 package of hard taco shells
ground beef (or whatever kind of meat you like)
black beans (drained)
Preheat oven to 350. Cook the meat with the seasoning, add about a cup of salsa. Get a baking dish and layer and spray with non stick spray. I garnish it with sour cream, lettuce, tomato and a little more salsa. Yum!!
You can play with it a lot and add your favorite ingredients.

#1) SPAGHETTI SKILLET DINNER
I made this last night and it was so easy and quick. I make it with a huge salad and garlic toast. DH loves it.
1 lb. lean hamburger
1 cup chopped onion
1/2 cup chopped green pepper
1 cup sliced mushrooms
1 - 28oz can tomatoes and juice
1 handful spaghetti, broken
1 cup water
1 1/2 tsp. Italian seasoning
salt and pepper to taste
1 cup grated Mozzarella cheese
(I also add red pepper flakes and some parmesan cheese)
Brown hamburger and onions. Mix in green pepper and mushrooms and cook for a few minutes. Add tomatoes with juice, broken spaghetti and water. Stir. Add spices. Cover and cook for about 15 minutes on medium, or until spaghetti is tender, stirring occasionally. Add cheese and stir until melted. Serves 4-6.
#2) Bruschetta 'n Cheese-Stuffed Chicken Breasts
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1/4 cup chopped fresh basil
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
8 small boneless skinless chicken breast halves (2 lb.)
1/3 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing
PREHEAT oven to 350°F. Combine tomatoes with their liquid, 1/2 cup of the cheese, the basil and dry stuffing mix; stir just until moistened.
PLACE 2 chicken breast halves in large freezer-weight resealable plastic bag. Pound chicken with side of heavy can, rolling pin or meat mallet until chicken is 1/4-inch thick. Repeat with remaining chicken breast halves, adding 2 at a time to bag. Place chicken, top-sides down, on large cutting board; spread evenly with stuffing mixture. Starting at one of the narrow ends, tightly roll up chicken. Place, seam-sides down, in 13x9-inch baking dish. Drizzle evenly with dressing.
BAKE 40 min. Sprinkle with remaining 3/4 cup cheese. Bake an additional 5 min. or until chicken is cooked through (170°F) and cheese is melted.
#3) All-American Meatloaf - from Martha Stewart's website
Be careful not to overknead the meatloaf ingredients; doing so will result in a heavy and dense loaf.
3 slices white bread
1 large carrot, cut into 1/4-inch-thick rounds
1 rib celery, strings peeled, cut into 1/2-inch pieces
1/2 medium yellow onion, roughly chopped
2 cloves garlic, smashed and peeled
1/2 cup fresh flat-leaf parsleyleaves, loosely packed
1/2 cup plus 3 tablespoons ketchup
4 1/2 teaspoons dry mustard
8 ounces ground pork
8 ounces ground veal
8 ounces ground round
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground pepper
1 teaspoon Tabasco Sauce, or to taste
1/2 teaspoon chopped fresh rosemary, plus more needles for sprinkling
2 tablespoons dark-brown sugar
1 tablespoon olive oil
1 small red onion, cut into 1/4 inch-thick rings
1. Preheat oven to 400°. Remove crusts from bread, and place slices in the bowl of a food processor. Process until fine crumbs form, about 10 seconds. Transfer breadcrumbs to a large mixing bowl. Do not substitute dried breadcrumbs in this step, as they will make your meatloaf rubbery.
2. Place carrot, celery, yellow onion, garlic, and parsley in the bowl of the food processor. Process until vegetables have been minced, about 30 seconds, stopping to scrape down the sides of the bowl once or twice. (Chopping vegetables this way saves time and ensures that vegetables will be small enough to cook through and not be crunchy). Transfer vegetables to bowl with the breadcrumbs.
3. Add 1/2 cup ketchup, 2 teaspoons dry mustard, pork, veal, beef, eggs, salt, pepper, Tabasco, and rosemary. Using your hands, knead the ingredients until thoroughly combined, about 1 minute. The texture should be wet, but tight enough to hold a free-form shape.
4. Set a wire baking rack into an 11-by-17-inch baking pan. Cut a 5-by-11-inch piece of parchment paper, and place over center of rack to prevent meat loaf from falling through. Using your hands, form an elongated loaf covering the parchment.
5. Place the remaining 3 tablespoons ketchup, remaining 2 1/2 teaspoons mustard, and brown sugar in a bowl. Mix until smooth. Using a pastry brush, generously brush the glaze over loaf. Place oil in a medium saucepan set over high heat. When oil is smoking, add red onion. Cook, stirring occasionally, until onion is soft and golden in places. Add 3 tablespoons water, and cook, stirring, until most of the water has evaporated. Transfer onion to a bowl to cool slightly, then sprinkle onion over the meatloaf.
6. Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking loaf until an instant-read thermometer inserted into the center of the loaf registers 160°, about 25 minutes more. Let meatloaf cool on rack, 15 minutes
#4) Mini Philly Cheesesteak Crostini
1 1/2 pounds flank steak
2 tablespoons grill seasoning, such as Montreal Steak Seasoning
Salt and freshly ground pepper
2 tablespoons olive oil, divided plus some for drizzling
2 large yellow onions, finely chopped
2 large red bell peppers, finely chopped
1 cup beef stock
2 crusty French baguette, sliced on an angle about 1/2-inch thick
2 cups shredded provolone cheese (I used mozzarella)
Preheat oven to 400°F.
Season the steak on both sides with salt, pepper and grill seasoning. Grill the steak and remove, cover loosely with aluminum foil and let it rest.
While the steak is grilling, heat a medium skillet over medium-heat with olive oil . Add the onions and season with salt and pepper. Cook for about 7-8 minutes, stirring every now and then. Add peppers and continue to cook until veggies are soft and onions are caramel in color, about 10 minutes. Add the beef stock, turn up the heat to high and continue to cook until there is only about 1/4 cup of liquid left in the skillet.
Once you have the onions and peppers going, make the crostini: Drizzle the bread slices with olive oil and place on the grill until you have light grill marks, about 1 minute on each side. Remove from the grill and reserve on a cookie sheet.
To assemble the crostini, put some steak on, then the pepper mix, then some cheese and broil it until the cheese melts.
Spinach artichoke dip
2 cans artichoke hearts
2 cups frozen chopped spinach
3/4 cup LOW FAT mayo
1 bag (2 cups) shredded cheddar
1 tsp dill weed
1 tsp basil
1 tsp pepper
Chop artichoke. The bottom part you can halve or quarter and the top leafy part just cut up as best you can. Bigger peices are better. You may want to spread the leafs apart before adding in remaining ingerdients. Just use your fingers like you would when mixing meatloaf. Defrost spinach. Mix 3/4 of the cheese and all other ingredients together. You can just use the dish you will cook in to mix in. Once thouroghly combined, sprinkle remaining cheese on top. Bake at 350 for 45 mins to an hour or until cheese on top has browned slightly. Can serve warm or cold, with our without crackers.
VERY IMORTANT! If you use regular instead of low fat mayo, it will turn out greasy
#1) I thought I'd go ahead and post this. It's soo good. I LOVE baked apples with cinnamon
4 tart green apples (or any apple really, i used red delcious)
1/2 cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon
Preheat oven to 350 degrees F (175 degrees C).
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.
Also what I did was add half apple juice and half water to the bottom of the baking dish. Then I added a spoon of butter and brown sugar and a tad bit cinnamon. It makes a great sauce to pour over the apple. And served with Vanilla Ice cream makes this even tastier! It's so easy and super good.
#2) 8 Eggs
1 frozen package of hashbrown patties
2 frozen hamburger patties (that i used as sausage but you can use any type of meat that goes good with breakfast really)
1 small red bell pepper
1 small green bell pepper
1 medium sized tomatoe
And shredded cheese
I baked the hashbrowns first in the oven as the package said. While that was baking I cooked my hamburger patties and when they cooled I just cut them up into smaller pieces. Then I cut up the onion, bell peppers and tomatoe. In a casserole, add the baked hashbrown patties to the bottom of the dish until its covered. Then add the cooked sausage/ham/bacon. Then add your chopped onion, bell peppers and tomatoe on top of that. Im a bowl scramble all of your eggs and add salt and pepper and a little bit of milk. Poor it over the food in the casserole and pop it into the oven until the eggs are cooked. Add shredded cheese and you have a yummy breakfast/lunch/dinner.
(sorry im not too good at writing recipes but you get the idea) hehe
#3) Muffin shaped Omelets
This is a fun breakfast. dont know what to name it.
What you need.
Chopped tomatoes, onion, and green bell pepper.
Chopped ham, or bacon pieces, or chopped sausages of your choice (cooked)
And salt and pepper if you wish.
Take the hashbrowns and place a little bit on the bottom of each muffin cup in a muffin pan. (if frozen put in oven first to warm up a bit). Then take out of oven, put tomatoes, onions, and green bell peppers on top. Then add the bacon/ham/sausage(cooked). Pour egg mixture over everything in each muffin cup. Place in oven (i put it at around 170 celcius) and take out when egg is cooked through. Put some cheese on top of each a few minutes before taking them out. And serve with salsa!
Its so good and easy and fun to eat!
#4) Mexican Lasagna
1 package flour tortillas (add more if needed)
1 large onion (or green onions)
2-4 fresh jalapenos (or 1-2 green bell peppers)
1-2 large tomatoes (or how ever many you wish)
Shredded Cheese (can be cheddar or white)
1 packet taco seasoning
In skillet, brown ground beef. Add taco seasoning and cook according to packet. Mix. While meat is cooking, chop onion, jalapenos (or bell peppers) and tomatoes and mix together (kind of like a pico de gallo). Place 2 tortillas (or as many as you need to cover bottom) in the bottom of a 9x13 inch pan. Spread meat mixture on top, then spread chili mixture, then top with cheese. Add 2 more tortillas on top, and add meat, chili mixture and add cheese. Top with tortilla once again. Repeat until all mixture is gone and topping with cheese. Put in oven for approximately 15-20 minutes or until all cheese is melted. I put my oven on at about 180 degrees celsius. (not sure in Farenheit)
Serve with salsa, sour cream, jalapenos, olives, a nice yummy salad, or what ever other sides you enjoy!
this is Kona's French Onion soup recipe
(so I don't lose it!)
2 to 3 lbs. sliced onions
2 tbsp. melted butter
1 tbsp. granulated sugar
8 cups good quality beef stock
1 tsp salt
1 tsp cracked black peppercorns
2 tbsps. brandy or cognac
12 slices baguette, about 1/2 inch (1 cm) thick
2 cups shredded Swiss or Gruyere cheese (I actually use mozzarella)
1. In slow cooker, combine onions and butter. Cover and cook on High for 2 hours.
2. Add sugar and stir well. Place two clean tea towels, each folded in half (so you will have 4 layers), over top of stoneware, to absorb the moisture. Cover and cook on High for 4 hours, stirring 2 or 3 times to ensure the onions are browning evenly, replacing towels each time.
3. Add beef stock, salt, pepper and brandy or cognac. Remove towels and cook on High for 2 hours.
4. Preheat broiler. Ladle soup into ovenproof bowls. Place 2 slices baguette in each bowl. Sprinkle liberally with cheese and broil until top is bubbly and brown, for 2 to 3 minutes, serve immediately.
If you don't have a good quality beef stock , you can improve it by combining the stock you have with 2 carrots (peeled and coarsely chopped), 1 tsp. celery seed, 1 tsp. cracked black peppercorns, 1/2 tsp. dried thyme, 4 parsley sprigs, 1 bay leaf and 1 cup white wine. Bring to a boil, simmer, covered for 30 minutes and strain.
This does make a lot so make sure when you make it you have alot of people there.
* 1 pound bacon
* 1 tomato, chopped
* 1 (32 ounce) jar mayonnaise
* 32 ounces sour cream
* 1/2 teaspoon garlic powder
* salt and pepper to taste
* 1 (1 pound) loaf sliced white sandwich bread
1. In a large skillet, brown entire pound of bacon until crisp, placing cooked strips on paper towels to absorb grease.
2. For best results, finely chop bacon in a food processor or with a hand blender, but finely chopping by hand will also work.
3. In a large mixing bowl, blend bacon, tomato and jar of mayonnaise. Add half the container of sour cream, blend well. Add more sour cream by spoonfuls, until the mixture isn't overwhelmed by the taste of mayonnaise (you'll be left with about a cup or so of sour cream, typically). LIGHTLY coat the top of the mix with garlic powder, and blend. Add a dash of salt and pepper to taste. Toast the bread, then cut into fours.
This makes 4 servings:
3 tablespoons butter
2 pounds chicken breast fillets, cut into 1 inch strips
1 teaspoon cumin
1/2 teaspoon dried coriander
1/2 teaspoon dried ginger
1/4 teaspoon red-pepper flakes (optional)
4 garlic cloves, finely chopped
1/2 cup chicken stock
1/3 cup heavy cream
1 tablespoon chopped fresh cilantro or parsley
Heat butter in a heavy casserole over medium-high heat until foam from butter subsides. Add chicken strips and cook in batches until browned, 5 minutes per batch. Add cumin, coriander, ginger, red-pepper flakes (if using) and garlic and cook, stirring occasionally, 2 minutes. Add chicken stock and bring to a boil.
Reduce heat to medium-low; simmer, stirring occasionally, 5 minutes. Slowly add heavy cream and simmer (do not let mixture come to a boil) until heated through, 3 minutes.
Transfer chicken and sauce to a serving plate. Garnish with cilantro.

I just made this tonight for dinner for the first time. It was super yummy! ...
1/2 pound ground beef
1 medium onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 (16 ounce) can refried beans
4 (10 inch) flour tortillas
1/2 cup salsa
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
2 green onions, chopped
2 roma (plum) tomatoes, diced
1/4 cup finely chopped jalapeno peppers
1/4 cup sour cream (optional)
Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.
I got it from http://allrecipes.com/Recipe/Jimmys-...za/Detail.aspx ... so I didn't come up with it on my own :P
Just wanted to share this yummy recipe!
Italian Sause and Meatballs:
Okay here is the recipe, but I must warn you I make it different every time. (different spices) And the texture is basically a feel it out kind of thing.
But here goes the basics:
1 pkg of lean ground meat (just double every ingrediant if you make more - sometimes I will do I pkg ground meat and 1 pkg of ground pork) - ground turkey and chicken work great too, but you may need more liquid b/c they are leaner.
About 1 cup breadcrumbs or crushed crackers or crushed cereal like cornflakes
1 egg or 1tbsp cornstarch and 1/4 c. warm water
Sometimes I will add about 1 - 2 tbsp of either BBQ sause, tomato paste, ketchup (you may need more bread crumbs if you add this b/c it makes the mixture more wet)
oregano/parsley/chopped onion or dried/minced garlic or dried powder
Mix together, texture should feel damp but not sticky (sticking to your fingers) and easy to role in your hands.
I usually prepare my sause before hand ... bring to a slight boil and drop my raw meatballs into it one at a time ... this seals the meat on the outside and then I turn down the heat to medium or less depending how long I have to cook them.
You can also broil your meatballs on a baking sheet in the oven and then add to your sause. This is good to do if your ground meat is other than lean b/c it gets rid of extra oils in the meat before adding to your sause.
If you want to know about a sause recipe ... here is one from this Italian.
1 can crushed tomato and 1 can stewed tomatoe (I like the spice in this can, it adds great flavour)
In a large pot add about 2 tbsp olive oil, heat add 1 small chopped onion and 3 cloves minced garlic. Cook until softened.
Add the 2 cans of tomatoes.
I usually add an additional 1 - 2 cans of water (fill your tomatoe can) b/c simmering will evaporate the water and make sause thicker.
Spices - add whatever spice you like I will usully put basil, oregano, black pepper and salt (I found 1 tsp of salt for every can of tomatoes is about right)
Simmer for about 2 hours, you know it is ready when the bright red colour of the tomatoes is more dull and the sause is sweet to taste.
My aunt accidentally discovered that if you put vinegar in your sause it makes it even sweeter. (she meant to add more olive oil)
I just realized I am not even on here!
