Anyone have any good veggie side dish recipes? I usually eat my veggies raw or steam them. It would be nice to try something new.
I mostly steam or sauté my veggies too. I like to sprinkle a little bit of shredded parmesan cheese and call it done.
I do have a few recipes that’s a little different.
First is steamed carrots with garlic-ginger butter. Recipe can be found here. I’m not a huge fan of carrots but this recipe was delish!
I also like roasted sweet potatoes.
2 8-oz sweet potatoes
1 Tbsp olive oil
1/2 tsp salt
1/2 tsp ground cumin
1/8 tsp cayenne
Cube 2 (8-ounce) peeled sweet potatoes. Combine sweet potatoes, 1 tablespoon olive oil, 1/2 teaspoon salt, 1/2 teaspoon ground cumin, and 1/8 teaspoon ground red pepper in a bowl; toss gently to coat. Place potatoes on a baking sheet; bake at 425º for 25 minutes or until tender.
My favorite is green beans almandine.
Take about a lb of fresh green beans, cut off the ends
saute in tbls butter about 5 minutes
stir in 3 cups chicken broth and 1/2 tspn salt
bring to a boil - cover and reduce heat to simmer for 15 minutes
stir in 2 tbls lemon juice
mix 1/4 cup water with 2 tbls corn starch and pour over green beans.
Let the whole thing simmer about 5 minutes stirring constantly
remove from heat and add 1/4 cup sliced toasted almonds.
