Recipes with garden goodies

Have any good recipes you want to share that use the goodies from your garden? I'm looking for zucchini and yellow squash recipes. While baking recipes are always good Smile I want some healthy ones too. After all, that is why I planted a garden, to eat fresh healthy veggies!

Well, I don't know how super-healthy this is since it's topped with cheese, but it's a fave in our family!

Italian Zuchhini

Cut zuchini (how the heck do you spell that anyways??!! Wink ) into rounds.

Spoon about 1 cup of marinara sauce (make your own with fresh tomatoes and basil??) into a large baking dish.

Tightly fit zucchini on top in a single layer.

Add an extra dollop of marinara on top of each round, then sprinkle a mixture of mozzarella and parmesan over the works.

Bake at 400 until your desired level of done-ness (we like ours still pretty firm, so maybe 10 -15 mins). Broil for a minute to make sure cheese is melted.

I have a recipe book at home that’s called “100 zucchini recipes” or something like that.

Here’s some ideas that we use:

Use zucchini instead of lasagne noodles in a lasagne.

Grill it with some olive oil, seasoning salt, peppers, tomatoes, and broccoli (I love this!!!)

Put it in pasta sauce

Google a zucchini bread recipe (you need to grate it)

A friend of mine suggested grating it, or putting it in the food processor and freezing it. Many recipes for baking with zucchini require you to squeeze it out to take out the moisture and freezing it does exactly that so it’s great to use.

Stuff it like squash with any number of yummy things.

We go to a restaurant that serves fresh raw vegetables in a glass cup with a half inch of dip in the bottom. It is so cute and refreshing. They use carrots, red & yellow peppers, cherry tomatoes, zucchini strips and celery. You could use cucumber too. Each person gets his own cup along with the meal. So often you never get any vegetables at restaurants!

I like to grill it! I have this pan you put over the grill. I spray EVOO on it. I throw together zucchinni, squash, onion, red pepper. I season it with salt and pepper (and whatever other spices you like) and grill until soft!

look on foodnetwork.com and type in zucchini... I got some good ones. Also I found an au gratin potato recipe on there but added onions and zucchini to it, omg it was yum central!!

Last night DH sliced up a zucchini and tossed it with olive oil, salt, pepper, oregano, and garlic and put it on the grill. It was GOOD! We both wished he had cut up two zucchinis, and DH doesn't even like zucchini!
