Need some menu ideas

I feel like I feed Jordan the same things everyday. I need some inspiration! She eats a lot of fruit but I am starting to suspect that the overabundance of fruit the reason behind her frequent diaper rash. So I need to add some other things to the menu. She's not big on meat and she will not touch most veggies unless I puree them and mix them into her yogurt.

Anyone want to help me out? Any book recommendations, recipes or easy lunch ideas would be great!

I have a hard time with lunches too. It's gonna get worse once the kids are in school. Today she had some chef boyardee!

sandwiches: grilled cheese, pb&j. She used to not bat an eye at tuna or chicken salad but she's gotten pickier. Last week I gave her bologna and cheese and she picked the cheese out and didn't eat anything else!

She loves both hamburgers and hotdogs so that's been a staple this summer. Gonna throw a kink in things this winter without a grill!

Soup? She has to really like it and be really hungry and really in the mood to be spoon fed. She'd rather feed herself. I'm eager to get her eating with a spoon on her own but at the moment she makes more mess with a utensil than without one! Drives me crazy!

Sweet potato fries? I was hoping Daisy would like these more when we had them the other day. She'd rather have the 'real' fries.

She eats a bunch of fruit too and wheat toast...and way too many goldfish crackers!

Ha ha, you know my answer....black beans!!! I swear Beni gets 80% of her non milk calories from black beans!! I just use canned, rinse really well and then sautéed them up with some olive oil, garlic salt and cumin. Served with rice, avocado and tomato, it's a greatmeal for yourself too! (of course, the baby can also have that other stuff, but I know mine doesn't want it!!)

Good luck- I feel like we're kind of in a rut too, but that said, Beni just isnt eating much of anything recently what with having been sick.

Mara, I cannot serve Jordan black beans without thinking of you and Beni. She had some tonight so you both crossed my mind! Smile

I think I'm going try to be more conscious about putting away a portion of dinner from the night before - maybe even as I'm dishing out the meal so she can have it for lunch the next day.

Pasta?

Eve is the same with red beans as Beni is with black ones. Also rice. And you can add some diced peppers and onions and toss in some peas or beans to make it a little more vegetably.

DH made this delicious dish--he thinly sliced some potatoes with a mandolin and added salt, pepper, some garlic salt and julienned green peppers and onions and cooked it on a skillet with a small lid smashing down the potatoes, and Eve just loved it (well, all of us did!). Here is the original recipe.

That dish sounds very similar to a dish that was standard in local Shanghai restaurants....except everything in it was julienned. Yummy!

Mason loves rice, especially spanish rice. He also likes ground meat and cold cuts. He loves yogurt and cereal bars as well as diced peaches, manderin oranges, sweet potatoes, cooked carrots, graham crackers, beans.

He won't touch toast or bread or pasta though - silly kid!

Luke has half a grilled cheese for lunch almost everyday. he LOVES it and I like knowing he's getting calcium because he's not a great milk drinker. Usually he will have either fruit or yogurt with it.

I've also noticed he will eat absolutely ANYTHING if its mixed with mashed potatoes. I always mix his potatoes 50/50 with some other veggie like steamed carrots or broccoli.

Alexander eats almost anything, but he sometimes changes how he likes it. For example, sometimes he still loves pureed carrots, but other times he'll only eat them in finger food pieces. Maybe try varying the texture? also, he LOVES the Heinz babyfoods that are fruit/veggie mixes. The beans and apples is a favourite, even though he doesn't like green beans when I cook them.

Same boat here... so annoying because I feel like I am giving her the same stuff over and over. She refuses sandwiches too which makes it really hard.

Morning star makes "chicken" nuggets that are reall all veggies and avery loves them... even over the regular chicken nuggets. She is a huge hot dog eater so I get her the turkey dogs and try to make it a little healthier. I am hoping with school starting she will eat more but I doubt it.

I like the idea of julienning the potatoes too. Yum!

Jake is weird. He doesn't like any of the things I think of most kids eating--but he loves foods that are more 'adult.' For example, his favorite meal is salmon with rice and asparagus. ??? But he's a veggie kid. He absolutely loves broccoli, cauliflower, carrots, spinach, etc, but the only fruit he'll eat is watermelon and apples.

For lunch he'll eat salmon, hot dogs, chicken, sometimes he'll eat mac n' cheese or grilled cheese, he LOVES salad (weird I told you) and hard boiled eggs. He won't eat eggs any other way lol. He also loves spaghetti and pizza, and chili.

Some days I can't get him to eat anything other than vegetables. I guess that's not such a bad thing??

Kayley is a big fruit and cheese girl. She eats very few veggies... I need to serve her more. She loves yogurt. She'll sometimes eat meat... especially if I mix a little ketchup of ranch into it. SHe likes fish crackers and cookies. We don't eat a lot of carbs so I don't feel guilty about them. She eats Gerber melts too.

Tonight she ate chicken with ketchup, cheese and the fruit n veggie melts. Lunch was thin strips of pizza and strawberries. Dessert is fish cookies. SHe had 4 sippies of milk.
