    Pumpkin Bars Recipe : Paula Deen : Recipes : Food Network

    I make this every Thanksgiving! Except I make cupcakes out of it, not bars. I'm sure a layered cake would be great too Everyone loves it. I do add a few other things, like a little splash of vanilla extract to the batter and some pumpkin spice as well.

    I make my moms potato salad. Her potato salad was always always always the best (and yeah she's my mom, but I'm serious!). I love DH's family, but they just can't cook like my mom. (She WAS a chef, so.. that might have something to do with it). Even DH, who's in love with his mom's potato salad - ate mine and said it was better.

    Lynn, I went with yours. I didn't make it until Tuesday. It was SO GOOD. DH took leftovers to work yesterday and today and he NEVER takes leftovers more than once. I, myself, had three huge bowls of it. Yummy, thanks!

    As for my potato salad... I don't have a set recipe, but I'll try. First off, dice up and boil about 3lbs of potatoes (okay see, I never make just a little so you don't need to do that much if you don't want, plus I use white potatoes, sometimes baking potatoes go to mush). When a fork goes through them, drain them. Pour into a bowl and add:

    1 lb of bacon fried VERY crispy and torn into pieces with your hands
    2 spoonfuls of bacon grease
    3 pieces of celery, diced
    4 eggs (boiled and diced)
    Salt & Pepper to taste
    2 squirts of mustard (I know, "squirt" is a very official term for cooking)
    Enough mayo to coat everything. I generally wait a few hours, with the potato salad in the fridge to cool it down, and then pull it out and add a little more mayo.
    1/2 red onion diced (my mom puts this in, I tend to leave it out)

    It's definitely not fat free But the Bacon does amazing things!

    I can't bake, I burn everything I make, plus I don't follow directions very well so it never tastes like it should.

    I make my grandmas fruit salad alot for the holidays. Everyone LOVES it.

    It consists of cut up apples, sliced bananas, couple spoonfuls of vanilla yougurt, 1 tablespoon of mayo. colored marshmellows, sliced maraschino cherries, and walnuts. You can add anything you like or substitute anything you dont. I add granola sometimes instead of walnuts. It's so yummy but it looks bad after a day or so because the bananas and apples turn brown. Good to make it a few hours before.

    Jessica, yum.. I agree.. bacon always does amazing things. I will have to try it but leave out the onion and celery.. man, my hubby is PICKY!
