Ok, here it is. I seriously just eyeball the dressing. I probably usually have more vinegar than oil...like lots more. LOL. But you know me. I always drink the dressing too. LOL. It's so good! You can make a whole bunch and keep it in the fridge. Then when you start getting low, just add more ingredients and shake again. Drooooolllll....
I also add green pepper to the salad sometimes. You can ad-lib it I guess. No real science to it.
Greek Salad
1 ripe tomato
1/2 small English cucumber
1/2 small red onion
Kalamata olives
2-3 tbsp dilled oil and vinegar dressing
2 tbsp feta cheese
Ground pepper
Oregano
Dilled Oil and Vinegar Dressing
1/2 cup olive oil
5 tbsp red wine vinegar
1 clove garlic, crushed
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
4 tbsp fresh dill or 1 tbsp dried dill
Dressing: Combine ingredients in a jar. Cover and shake well. Pour over cut up veggies.
I love feta cheese, but isn't it on the naughty list? (for pregnant women, that is)
That salad sounds yummy. I love greek salad.. I'll have to give it a try sometime.![]()

Sounds delish! I make a similar dressing for regular green salad (kinda make it up as I go along, but same ingredients)... mmmm...

ZOMG! Adriana you have to tell me about the greek place. I have been having old co-workers stalk the cafeteria menu at the hospital because I could chop off someones arm right now for their greek salad.
ETA: Ok, not literally chop someones arm off, but you get the idea. LOL
