Lunch is the most difficult meal for me to come up with ideas for. What are you having today?
Usually I just eat whatever I am making for the kids...hot dogs, sandwiches, quesadillas. Sometimes I eat leftovers. A lot of the time we will have lunch at the park & have sort of picnic foods/ snacks like cheese, salami, apples.
Today I am going out to lunch with DH after my u/s!
Enchilada casserole leftovers today! Lunch is easy, usually just sandwiches or leftovers, but dinner is a PITA!
A big salad! Romaine lettuce, fresh tomatoes, cucumbers, chives, tomato basil feta, shredded carrots, and home made vinagrette! With a huge glass of skim milk (been having terrible leg cramps!) Dessert is angel food cake with fresh strawberries and a little bit of whipped cream.

I'm at work today, so I've packed leftovers from last night's dinner. Chicken breast stuffed with (all natural) sausage and spinach.
I have a really bad habit of not eating enough protein when I'm home alone without SO. You know, I'll have some fruit or rice. So, I'm trying to get in the habit of consistently eating the prior night's leftovers for lunches or making a veggie/egg scramble.
Ok I just had a great low fat haha lunch! A beef slider with lettuce, mayo, avacado and roasted red peppers and cream cheese - home made! It's a keeper for my recipe box! I alsohad a pepper, tomato, black bean, corn, cilantro, lime juice, olive oil salad, yumm yumm!!!
That salad sounds fantastic. I'm going to have to make that sometime -- I think I'd enjoy it even more if I were dipping delicious corn chips in it.
I actually forgot to write that I sprinkled tortilla chips on it:)

Nothing... I didn't have time to pack a lunch today... and I'm broke until tomorrow!
I too really need to add some more protein to my diet. I am having a hard time with it. This weeks lunches have been mostly leftovers and what ever I can grab that is healthy and quick. With this crazy week I am glad that I am finding the time to eat
