It really sucks, but after toying around with giving it up, I realized a difference in his spells after avoiding it a couple of days. He was starting to get pretty bad. It started out as what seemed like normal colic, but slowly progressed day by day into something definitely more. Crying after feedings, lots of adult like gas, refluxing in his throat, spitting up a lot of all kinds of stages of the milk(fresh to curds). He was having a hard time sleeping and when he did fall asleep, the pains would wake him up like every 30 minutes.
I tested out the idea it might be dairy(as it is the #1 irritant for sensitive babies) last week, went a couple days without and and then had some. It was he!! for 2 days after I had some cheesecake after going without dairy. I mean it was BAD, that was when I decided for certain it is dairy.
Now we are on day 4 of absolutely no dairy(no butter, no foods made with milk byproducts, etc) and he is doing SO much better. His gas is almost gone and his spitting up has decreased a great deal. He has been sleeping way better, today he has slept so soundly :) I also am giving up tomatoes, as they seem to set him off as well.
So you may want to look into and consider that as well.
