What's your go to dinner to make when you're expecting another couple/family over for dinner?
A bit of a selfish question today. Our one set of friends here is moving next week (they just found out Wednesday!), so we've invited them over for dinner Saturday night. NO IDEA what to make. My brain is dead!
The quickest and easiest for me is lasagna. Throw some salad bread.. Boom, bam your done.. Plus you have that time to clean up the kitchen while its cooking..

Lasagna is a good choice.
Another one that I do is I take a whole chicken (butter, salt and pepper) and roast it in my roaster (or oven) with potatoes, celery, broccoli, carrots and some onion and garlic. Just throw it all in there and in about an hour or hour and a half it's ready!
BBQ. DH runs the grill so I do very little . I throw together shishkabobs the night before and let them marinate. I also like to grill portobello mushroom caps. I brush the gills with oil and balsamic vinegar, top them with feta cheese and grill. So easy and always a crowd pleaser.
I have a few options that I use for guests... spaghetti, ceasar salad & garlic bread; macaroni casserole, breaded chicken, glazed carrots/brocolli & cheese; BBQ steak, cut up red potatoes w garlic, butter & oinions mixed together done on the bbq too, w mushroom...
I actually really want to try some new recipes!! I like the idea of the skewers Maybe that's something I can swing for Mother's Day
I don't invite people over for dinner. They would starve.
