Ok. This might be a dumb question but, how do you know what color to adjust on when choosing selective color on photoshop?
I always only adjust the Red, should I be checking and adjust other colors as well?

Um...yes. You are selecting the color that is a problem and adjusting the levels for that color. So if your yellows look wonkey....adjust the yellows.
Selective color really is that...it adjusts just the selected colors so it is not good for global correction.

I just wanted to add that the reason red is adjusted so often is because adjusting it works really well when working with skin tones. Damien on ILP says that red is the major color of skin.
I use it to add richness to the neutrals and blacks.
