Hi!
I know I've been gone FOREVER. Sorry - things just got away from me and I just kind of stopped posting, BUT something made me want to check in over here. I miss all of you and even though I can keep up with most of you on FB, it's not quite the same.
We are doing okay - DH has been gone all summer for work, Lily and I have been toughing it out solo. It was miserable at first, but we found our rhythm and it got much easier. Now we have 3 weeks left before DH is back (and we will probably have to find a new routine again).
So what's been going on here?
I'm going to try to be here more!
I'll have to post some pictures of Lily soon - she's growing up so fast, it's nuts.
Good to hear from you, I've been seeing your updates on Facebook. I am sure it is difficult finding time when you have to care for a LO alone, glad you found a daily rhythm that works.

Hi Erica!! I "see" you on FB but it's nice to hear about daily lifeLily is so totally adorable. Glad summer sans DH found a groove. I have one night w/o DH (tonight he's got a work thing late for example) and I feel whiny LOL and entire summer I'd probably lose it!

I feel like a repin half the recipes you add! hahaha We must have the same cooking habits because we tend to pin a lot of the same type of stuff.
DH and I have been slowly making lifestyle changes over the past few years, first we cut out most processed foods, then recently we started going lower fat, including eating very little red meat and adding fish to our diet, also doing meatless Mondays. I like to pin the meatless meals cause I have no idea what I am doing when cooking meatless.
Made a vegetable curry that I pinned, it was YUMMY, a hit with everyone in the house, I may reduce the cook time on the eggplant in the recipe since it was a little mushy (does eggplant stay a bit more firm when cooked less?).
I seem to re-pin a lot of your recipes too.

Meatless gets easier when you start thinking less in protein and sides and more in whole meals. I've been a vegetarian for 20+ years, but DH isn't - we always cook vegetarian at home though. IT took him a while to get into the mindset, but now it's second nature to him.
Eggplant should stay firmer if you cook it less, just add it in a bit later. I love curries!!
Glad people like what I pin, I do a lot of pinning on my phone while I am nursing Lily at bedtime.

He's in CA for this thing called the Y-Combinator. It's like Harvard or Wharton for start-ups. They have it 2x a year and everyone has to move out there for 3 months. He left the first week of June. We are down to 16 days left though.
