Beef Stew with tomoatos, wine and peas
2 T all purpose flour
2 t chopped fresh thyme
1lb lean stewing steak, cut into cubes
2 t olive oil
2 onions, chopped
1lb jar(or home made) passata
1 cup beef stock
1 cup red wine
2 garlic cloves crushed
2 T tomato puree
2 cups of peas(fresh or frozen)
1 t sugar
salt and fresh pepper
Preheat oven to 325f
Put flour in a shallow dish and season with chopped thyme, salt and pepper
add beef cubes and coat evenly
Heat oil in a large casserole, add beef and seal all over on a medium heat. Remove with a slotted spoon and place on a plate
Add onion to pan, scraping base of pan to mix in the flour sedement, cook gently for 3 minutes, stirring frequently.
Stir in the Passata, stock, wine, garlic and tomato puree
Bring to boil, stirring. Return the beef to the pan and stir well to coat with the sauce.
Cover and cook in the oven for 1 hour 30 minutes add frozen peas and sugar and cook for a further 30 minutes
Add Salt and Pepper to taste.
Serve immediately with Mashed potatoes or oven roasted smashed potatoes! even rice!
