Carrot Cake or Bread?

I am in need of a good, tried-&-true recipe for carrot cake or carrot bread. Icing or not does not matter. What matters is flavor and the use of carrots.

(I am trying to sneak more carrots into my kids, and feel this is a great way to do it.)

Here is the one I use, everyone in the family loves it!!! I found it somewhere online.

Carrot Cake

4 eggs
1 1/4 cups vegatable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans

1/2 cup butter
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

1. Preheat over the 350 degrees F (175 C). Grease and flour a 9x13 inch pan

2. In a large bowl, beat together eggs, oil, white sugar, and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.

3. Bake in the preheated over for 40-50 minutes, or until toothpick inserted inserted into the center of hte cake comes out clean. Let cool in pan for 10 minutes, then turn out onto wire rack and cool completely.

4. To make frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

**I always omit the pecans**

Thanks Becci! I plan to make it tonight, if I can get the kids bathed and into bed by a reasonable hour. Smile I'll let ya know how it turns out!

Well, things got a little hectic, and I didn't get it made just yet. However, I am hoping that I can get enough done today that I will have free time tomorrow afternoon to do it.... sheesh.... WOH sucks sometimes....

OK, I have carrots and my fridge is cleaned out. When I go to the store on Monday I will be sure to get everything I need to make it and will have it baked before the end of the week! THAT'S A PROMISE! :mrgreen:
