I think I got this recipe off one of the morning shows when they had on The Cake Mix Doctor lady. DS loves these muffins and they are pretty healthy!
1 boxed Spice Cake mix (I've used Carrot Cake also)
1 15oz can of pumpkin
1 whole egg, beaten
1 cup raisins (optional)
Preheat oven according to cake mix directions.
In bowl, mix dry cake mix, pumpkin, egg and raisins. Mix until just incorporated. Batter will be thick and may have some small white lumps of cake mix in it. That's okay.
Bake according to cupcake directions on back of cake mix box.
Healthier than cupcakes because you don't use the usual oil or all the eggs suggested in the regular mix since the pumpkin has so much moisture. Pumpkin is a good source of Vitamin A and fiber too! I've also added flaxseed and wheat germ just to make them an extra 'healthy' punch. DS scarfs those down too
