How about these:

2 cups sugar
1/2 cup light corn syrup
1/2 cup water
few grains salt
2 egg whites
1 tsp vanilla
1/2 cup chopped walnuts

Place sugar, syrup, water, and salt in sauce pan over low heat. Stir until sugar is dissolved, then cook without stirring to 252 degrees F; beat the egg whites until stiff but not dry.

Wipe the crystals from the rouring edge of the pan. Pour the syrup in a very fine stream over the egg whites, beating constatnly while pouring. Do not scrape bottom of pan. Continue beting until the mixture holds its shape. Add vanilla and nuts.

Drop quickly from the tip of a spoon onto waxed paper in individual peaks, or turn into an oiled shallow pan and cut in 1-inch squares when firm. Makes about 1.25 pounds.

Holiday Divinity: Use pistachio nuts and chopped candied red cherries instead of walnuts.

Brazil-Nut Divinity: Use Brazil Nuts instead of walnuts.

Black-Walnut Divinity: Use black walnuts instead of walnuts.

Chocolate Divinity: After the syrup and egg whites have been combined add 2 squares (2 ounces) melted unsweetened chocolate.

Brown-Sugar Divinity or Sea Foam: Substitute 1 cup firmly packed brown sugar for the 1 cup granulated sugar.
