Healthier Options

So, I rejoined Weight Watchers this past Saturday and have had a hard time coming up with filling things to eat that don't cost a lot of points. Tonight I am going to try this and see how it turns out:

Turkey Tacos-Servings 6, 3 points each taco (PointsPlus Program)
8oz Lean Ground Turkey
2T Taco Seasoning

6 Corn Tortillas
1C 1Shredded lettuce
C Chopped Tomatoes
3T Sour Cream

I am using full fat sour cream cause that is what I have on hand. Each prepared Taco is 3 points. The recipe builder doesn't tell me nutrition information but two tacos is a pretty good meal I would guess and I would probably add something else for a couple more points. I haven't put in what FF sour cream would do to the total but it might make a difference. And I was being very generous with the sour cream too. I will come back and let you know how they tasted and how filling it was.

let me try to remember some of my favorites (I don't know the points anymore though! sorry :()

Steak Tacos:
4-5 oz of steak
Green pepper
corn shells
RF sour cream

Spray pan with olive oil spray slice steak, chop onion and pepper and throw in the same pan, cook till done. Season to taste. Set to the side. Place 2 corn shells in pan that steak was cooked (use those juices! yum!) warm shells. Put steak and veggies between both shells top with chopped cilantro and sour cream! YUM!

I would usually serve these with rice just cuz I like carbs hah Smile

Shrimp Salad:
handful of shrimp
Kraft Light Toasted Asian dressing ( I believe I would do like 2 tbl spoons-- but again, don't remember the points..)

Cook shrimp stove top with seasons. Serve over salad! Smile Done!!

How do you like the new WW points system?

Caramel Apple Salad

1 small box sugar free instant butterscotch pudding
1 can crushed pineapple
1 8 oz. container fat free cool whip
4 granny smith apples, diced

Mix pudding powder and crushed pineapple (with juice) together. Fold in cool whip. Mix in apples.

Here is a recipe that I have made a couple times now and we really love it! The chicken is super moist and has a ton of flavor. Thinking I might make this tonight!

It's from the Hidden Valley Recipe site. I just entered it into WW recipe builder and it turns out it is great for points. The original recipe on the Hidden Valley page says to do 1 pound of chicken, but I have found the the marinade goes a lot further and use 2 pounds of chicken and double the # of servings. This is my modified recipe.

Broiled Chicken

Course: main meals
PointsPlus™ Value: 4
Servings: 8

1 package Hidden Valley Original Dip Mix
3 Tbsp olive oil
1 Tbsp red wine vinegar
2 pound(s) uncooked boneless, skinless chicken breast


In a small bowl, combine the dressing mix, oil and vinegar and stir until emulsified.
Place the chicken in a gallon-size Glad® Food Storage Bag together with the marinade and seal bag. Store chilled for 1 hour.
Preheat the grill or broiler.
Remove the chicken from the bag and discard the remaining marinade.
Grill the chicken for 5 to 7 minutes on each side or until juices run clear.
Let chicken stand covered for 5 minutes before serving.

Taco soup

This is a great recipe since it is so very easy and makes a huge pot. I freeze half of the recipe and then when I don't want to cook, I take it out of the freezer and volia dinner.

1 1/2 pounds of ground turkey
1 small onion, chopped
1 bell pepper chopped
1 (15 ounce) can black beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can pinto beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (15 ounce) can tomato with green chilis (like rotel)
2 cups water
2 (14.5 ounce) cans stewed tomatoes
1 package of taco seasoning mix
Salt, Pepper, Garlic Salt to taste

Brown turkey meat, onion and bell pepper together in large pot. Add beans, corn, tomatoes, and seasoning and bring to a boil. Boil at least 15 minutes until flavors combine. Can be served with avacodo, chips and cheese to top off if desired. Serving size is one cup.

Here's a WW recipe we really like. It's 7 points on the old plan.

Penne with Meat Sauce Arrabiata

3/4 lb ground lean beef (5% or less fat)
2 tsp extra-virgin olive oil
1 onion, chopped - I used 1 Tbsp dried minced onion
1 small red bell pepper seeded and chopped
3 garlic cloves minced - I cheated and used the jarred garlic
1 tsp dried basil
1/4 tsp ground fennel
1/4 tsp crushed red pepper
1 (28 oz) can crushed tomatoes
1/4 c tomato paste
1/2 tsp salt
4 cups whole wheat penne (about 12 oz)

1. Spray a nonstick Dutch oven with olive oil nonstick spray and set over med high heat. (I just put a bit of olive oil in a skillet instead). Add the beef and cook, stirring frequently to break it up, until browned, about 5 min. transfer to a bowl.

2. Heat the oil in the same pan over medium high heat. Add the onion, bell pepper, garlic, basil, fennel, and crushed red pepper; cook, stirring occasionally, until slightly softened, about 3 minutes. Add the beef, tomatoes, tomato paste, and salt; bring to a boil. Reduce the heat and cook, stirring occasionally, until the sauce is slightly thickened, 15-18 minutes.

3. Meanwhile, cook the penne according to the package directions, drain in a colander. Return the penne to the pot and stir in 1 cup of the sauce. Divide the pasta mixture among 6 plates and top each with the remaining sauce. (or just leave in the pan like we did and spoon out a serving)

Per serving (about 1 2/3 cups); 354 Cal, 6 g Fat, 2 g Sat. Fat, 0 g Trans Fat, 32 Mg Chol, 409 mg Sod, 58 g Carb, 9 g Fib, 23 g Prot, 86 mg Calc. Points Value: 7

You can sprinkle 2 Tbsp Parmesan cheese on the top of each serving for an added point value of 1. We didn't try with the cheese, was good w/o it.

crock pot roasted chicken

one whole chicken, cleaned, (or several pieces)
in cavity of chicken, place a piece of onion, carrot, and celery

sprinkle chicken with poultry spices, oregano, and garlic powder (or use whole garlic cloves)

1 onion, chopped, inserted around chicken-

squeeze 1/2 lemon over top of chicken-
optional: 1/2 cup vegetable or chicken broth.

Low heat aprox 8 hrs
high heat aprox 4-5 hrs

The last time I made this- I added 1 pound of chunky cut-carrots in the bottom, topped it with 4-6 md poatoes, peeled, cut and then put the chicken on top-
and I used aprox 1 cup of broth.
Cooked the same length of time. It gave me several meals of leftovers.

I made Turkey Meatballs in BBQ sauce tonight!

Serving Size: 2 PointsPlus: 5
8oz of Ground Turkey
Italian seasoning
bread crumbs
BBQ sauce

This made 8 good sized meatballs and is only 5 points per serving of 4 meatballs! I mixed everything but the BBQ sauce and then made meatballs. Cook in a skillet until nearly done then cover with BBQ sauce. Simmer for about 10 more minutes and then either eat alone or on a piece of low cal bread. SOOOOooooo Yummy!

Kielbasa/Pierogy casserole. (4 servings)
-12 Pierogies (defrosted in hot water for 5 mins)
-1 package turkey kielbasa (sliced )
-1/2 bag of green beans (I like the french cut ones)
-Packet of turkey gravey mixed with 1 cup water

Line the bottom of a baking pan with the pierogies. Sprinkle kilbasa over top. Layer green beans over that. Then pour gravy over top. Bake about 25 minutes @ 350. Or until its heated thru and starting to bubble.

Its 6 points on the old weight watchers plan. I don't go to meetings so I don't know the details of the new plan to convert it. But the pierogies are a point a piece and the kielbasa works out to be about 2 points a person. Green beans are 0. And the gravy works out to be 1 point a person.

I'm not too familiar with WW myself but ive just started a new diet plan. This is a recipe from their website and I tried it a couple of days ago - it's delicious!

Italian Stuffed Capsicums

4 medium red capsicums, halved lengthways
250g cherry tomatoes
1 large tomato, chopped
6 slices prosciutto, chopped
1 garlic clove, crushed
1 tablespoon olive oil
1 cup reduced-fat grated mozzarella cheese
small basil leaves and salad leaves, to serve


1. Preheat oven 220°C/200°fan-forced. Line a large baking dish with baking paper. Place capsicums, in a single layer, in prepared dish.
2. Combine tomato, prosciutto, garlic and oil in a bowl. Spoon mixture into capsicum halves. Bake for 45 minutes or until capsicum is just tender.
3. Remove dish from oven. Top with cheese. Return to oven. Bake for 10 minutes or until cheese has melted. Top with basil leaves. Serve with salad leaves.

Here is another WW recipe from back in the day. I LOVE this one when I'm hungry for Chinese Food.

Cashew Chicken
Points: 8 (old plan)

2 tsp peanut oil
2 medium garlic clove(s) minced
1 pound uncooked boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 tsp table salt, more to taste
1/4 tsp black pepper, more to taste
1 1/2 cup fat-free, reduced-sodium chicken broth, divided
2 Tbsp low-sodium soy sauce, or more to taste
2 medium stalk celery, chopped
8 oz canned bamboo shoots, drained
8 oz canned water chestnuts, sliced, drained
1 1/2 Tbsp cornstarch
2 cup cooked white rice, kept hot
1 3/4 oz dry-roasted cashews, chopped (about 6 Tbsp)

Heat oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds. Season chicken on both sides with salt and pepper and add to skillet. Cook until browned on all sides, stirring frequently.

Add 1 cup of broth, soy sauce, celery, bamboo shoots and water chestnuts to chicken and bring to a simmer. Reduce heat to low, cover and simmer until chicken is cooked through, about 5 minutes

Dissolve cornstarch in remaining 1/2 cup of broth; add to skillet and simmer until sauce thickens, stirring constantly, about 1 minute.

To serve, divide rice among 4 shallow dishes. Spoon chicken mixture onto rice and sprinkle with cashews. Yields about 1 cup of chicken, 1/2 cup of rice and 1 1/2 Tbsp of chashews per serving

I call this my Healthy Dinner:

Ingriedinets are easily variable based on how many you're cooking for:
1-2 packages turkey kielbasa
1 box whole wheat or multigrain angel hair pasta
1 big bag of broccoli cuts
low-fat grated parmesan cheese
olive oil
black pepper

- slice the kielbasa (I slice, then cross-slice to get small bite-size pieces)
- cook in frying pan (nothing added)
- cook the pasta according to directions
- microwave the broccoli
- when pasta's ready, drain, add a touch of olive oil to keep it from sticking and for taste

- plate each according to how many of each you want, top with pepper and parmesan

This is my favorite, and easily reheats for lunch the next day!
