    Default I need help!!

    I've come to the realization that I am not the mom I want to be when it comes to feeding my kids! I want to start cooking good, healthy meals for them but don't know where to start!! Because of work schedules, I cook for them half of the month and DH for the other half. I know he won't take the time to cook extra healthy, so it will be on my lap to start it and hopefully motivate him.

    I honestly don't know where to start!! What kind of good, kid friendly recipes do you prepare!

    I try to follow the old-fashioned rule of "meat/2veggies" that my mother followed. I figure that at the least, I can be assured they are getting a good dose of vitamins that way.

    I also make sure that the veggies are of varrying colors - yellow and green / orange and green - that way I know we are hitting different vitamin groups.

    I also tend to use the veggie based pastas rather than just plain egg noodles. For instance, instead of just plain fetuccini, I use half plain and half spinach fettucini; or I use the tri-color pasta. The kids love the colors, and eat it really well.

    I throw in veggies whenever I can too! Spaghetti always gets an extra cup or two of pureed carrots mixed in with the sauce. I throw broccoli in with many of my pasta dishes because when it gets mushy it blends in so well that no one ever knows it's there.

    Also remember that baking instead of frying is a wonderful option! This reduces the fat content of the food (if you do it right) and is also easier sometimes. Just think - to fry chicken you must stand over the pan and watch it; to bake it, you just throw it in the oven and set a timer.

    Use a crock pot! These are wonderful! You can throw all kinds of meat/veggie combos in the pot and then just let it cook all day/night. There is no easier way to cook a healthier dinner than that!

    Those are great tips! I'll be heading to the store tomorrow to buy some colored pasta and carrots!

    Luckily, I'm lazy and I hate frying anything! I hate the work and the mess, so that isn't usually an issue! The one good thing about hating cooking! LOL

    I also found another idea on the web. Sweet potato fries that you bake instead of fry!! I am going to try that this week, too!!

    I have heard of the sweet potato fries, but my kids won't eat sweet potatoes period, so I have never tried them. Let me know how they go over with the kids!

    The greatest tip I have found, is that if you only buy the stuff that will make the healthy meals, usually that is all that you can make. At my house, we keep the pantry stocked with things like WHOLE wheat bread, and WHOLE WHEAT pastas, Sodium free canned Veggies (if not frozen), Sugar free desserts, and things of that nature..... I figure, if I try to keep all of the extra stuff out of the house, It won't do too much harm if my son doesn't get to eat both veggies.
