    Default lookin for cranberry muffin recipies

    I'm in need of a cranberry muffin recipie. Maybe a cranberry orange muffin. Anything would be great!!

    I have not found a cranberry-orange muffin, but I *do* have a cranberry-walnut muffin... It has orange peel and orange juice in it, so perhaps it might be what you are looking for.

    Cranberry-Walnut Muffins
    • 3/4 cup all-purpose flour
      3/4 cup whole wheat flour
      1/2 cup rolled oats
      1 tbs baking powder
      1/2 cup sugar
      1 tsp cinnamon
      1 egg, slightly beaten
      1/2 tsp grated orange peel
      1 cup orange juice
      1/2 cup applesauce
      1/2 cup sweetened dried cranberries
      1/2 cup chopped walnuts

    1. Preheat oven to 375F. Grease 12-cup muffin pan with cooking spray.

    2. Combine all=purpose flour, whole wheat flour, oats, baking powder, sugar and cinnamon in a large bowl; mix well. Make a well in center.

    3. Beat egg, orange peel, orange juice, and applesauce in a small bowl with a spoon until combined. Add to flour mixture. Mix just until moistened. Fold in cranberries and walnuts.

    4. Fill muffin cups 3/4 full. Bake until golden, about 20 minuts.

    **You can make these muffins up to 24 hours ahead and freeze the leftovers in individual plastic bags.

    **Toasted almonds can be used instead of the walnuts.

    **To avoid tough, dry muffins that do not rise properly, stir the batter just until the flour is incorporated. The batter should have a lumpy appearance.

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 3/4 Cups whole wheat flour
    1/4 Cup oat bran
    1/2 Cup honey
    2 Teaspoons baking powder
    1/2 Teaspoon salt
    1 Teaspoon baking soda
    1/4 Cup orange juice
    2 Teaspoons canola oil
    2 egg whites
    2 Cups cranberry sauce -- canned or homemade
    1/2 Cup orange juice -- if needed

    Preheat oven to 400F. Grease muffin tins.
    Combine all ingredients except 1/2 cup of orange juice in a large bowl. Mix
    until blended. Add extra orange juice as needed to obtain a proper batter.
    Fill muffin tins 2/3 full.
    Bake 15-20 mins.
    Makes 30 medium or 18 large muffins.

    That recipe looks so yummy, and yet so healthy! Wonder if my kids would eat it.... Maybe it's worth a try....
