OK, so I feel foolish. As I was in the shower, I realized that I hadn't checked the recipe thread all week. And then I thought "Oh no, it was probably my week." And, check it out! It was my week to post a recipe, and I totally messed it up. I'm sorry. SO you don't have to make it if you don't want to or anything, but it's an idea.
I make this a lot, and niether me or my DH like the "taste" of fish. This is always a winner, even with my kids.
Lemon Garlic Tilapia
4 tilapia fillets
3 tablespoons fresh lemon juice
1 tablespoon butter, melted
1 clove garlic, finely chopped
1 teaspoon dried parsley flakes
pepper to taste
1.Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
2.Rinse tilapia fillets under cool water, and pat dry with paper towels.
3.Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
4.Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

Les27, me too! I also thought about messaging you Lisa, but I know what a crappy week you were having anyway, so I figured you would get to it eventually.
I already have all of the stuff that I am going to cook tonight, but I will try this either Sat or Sun. I loooove tilapia - it is such a nice mild fish.
I was going to make this yesterday and I bought all the ingredients and was so excited to use some fresh parsley I have growing in the back yard and I totally forgot to buy lemons!! Grrr...I already had the fish washed and ready to go so I just ended up pan frying them the way Mr. Alton Brown likes his Tilapia.
I will for sure try this again next week!!
