2 lrg chicken breast cubed
1/2 bag of frozen mixed veggies (I use a mixture of broccoli, cauliflower and carrots)
1/4 cup diced onions
2 bag of brown Minute Rice
1 cup beef gravy for a little flavor (I use instant)
Cook chicken in skillet, saute veggies and onions in another skillet with just a small amount of olive oil, until tender. Boil rice and combine all ingredients. Coat ingredients with a little bit of beef gravy to give it a little flavor and color.
