Need 2 recipes

Does anyone have one for chili corn chowder? My mom used to make it when I was little and it was so good. The other one I am looking for is bread pudding. Another favorite of mine. Thanks.

I have one for bread pudding that is just really yummy - the kids LOVE it, and probably have one for chili corn chowder. I will have to do some digging around, so I will post them this afternoon.

I am still looking for the chili corn chowder recipe. I have searched all my cookbooks, and am now resorting to internet searches. I will let ya know if I come up with anything.

I am still looking! This is a really difficult recipe to find. I am coming up with nothing. Are you sure it isn't something that was created by a family member and the recipe just isn't out there? :dontknow:

Nope. Dar. I just enterred in the top of my screen and came up with this recipe.

Chili Corn Chowder
2 TB olive oil
1 medium onion, chopped
2 cloves garlic, smashed and peeled
2 TB flour
1 package (10 oz) frozen corn kernels
2 cups vegetable or chicken broth
1 cup water
1 medium all-purpose potato, peeled and diced
1 red bell pepper, diced
1 carrot, diced
2 TB cream of rice
1/2 cup rice milk (rice beverage)
2 tsp chili powder
1/2 tsp salt
1/2 tsp black pepper
2 TB chopped chives or scallion greens (optional)
Prep Time: 20 minutes
In a large skillet, heat oil over medium heat. Add onion and garlic and cook, stirring, five to seven minutes or until golden. Stir in flour and cook, stirring, two minutes or until flour is no longer visible.
Add corn, broth, and water and bring to a boil over high heat. Add potato, bell pepper, carrot, and cream of rice; reduce heat to medium-low and simmer 10 minutes or until potato is just tender.
Remove from heat and stir in rice milk, chili powder, salt, black pepper, and chives (if using). Serve hot or at room temperature.

Ya know, I entered that at the top of my screen and came up with a thousand recipes for corn chowder and a thousand recipes for chili - nothing for chili corn chowder.... strange....
