Try thawing the sausage and then removing the casing so that you just have ground sausage. Brown the sausage just as you would ground beef and use it in a tamato based spaghetti sauce instead of ground beef. It adds a good flavor to the sauce.
Oh, and you could also use it in a jambalaya recipe. Pretty much anything that asks for ground beef you can substitute sausage (or do a mixture of beef and sausage. I also substitute sausage for chicken in a lot of things - like gumbo or jambalaya. It just adds a different flavor / texture to the meal.
