    Date Pinwheel Cookies
    Filling Ingredients:

    · 1lb pitted dates; chopped
    · ½ C water
    · ½ C Sugar
    · 1 C chopped nuts (you pick what kind)

    Dough Ingredients:
    · ½ C butter or margarine; softened
    · ½ C brown sugar
    · ½ C sugar
    · 1 well beaten egg
    · ½ tsp Vanilla
    · 2 C sifted flour
    · ½ tsp soda
    · ½ tsp salt

    Filling Directions (best to do once the dough is already mixed):
    Combine dates, water, and sugar in small sauce pan. Cook 2 to 3 minutes, stirring constantly. Let cool to warm/cool temp. Stir in chopped nuts. NOTE: it’s best to make this after the dough is ready so that it doesn’t get to thick/cold to spread on the dough.

    Dough Directions:
    Thoroughly cream butter and sugars. Add egg & beat well. Add vanilla and stir. Sift dry ingredients together. Add to creamed mixture; stir until smooth. Cover and chill the dough in the refrigerator for about 1 hour.

    Divide dough in half. Roll one part on lightly floured surface until about ¼ inch thick. Spread half the date-nut mixture on top of the dough. Roll like a jellyroll. Wrap in waxed paper. Repeat with remaining dough and date-nut mixture.
    Chill the rolls in the freezer or refrigerator until firm (makes it easier to slice). Cut into ¼ inch slices. Place on lightly greased baking sheet. Bake in pre-heated 400 degree oven for 8- 10 minutes. NOTE: the cookies don’t spread that much, so it’s okay to space them close together on the sheet.

    Chocolate Chip Peanut Butter Blondies
    Makes: 20 bars

    Ingredients
    1 cup margarine
    2 cups sugar
    2 eggs
    1 tsp vanilla
    1 cup chunky Peanut Butter
    2 cups flour
    1 tsp baking powder
    2 cups semi-sweet chocolate chips

    Directions
    1) Preheat oven to 350 degrees. Line a 10x15 inch jelly roll pan with parchment paper.
    2) In a medium bowl, cream together the margarine and sugar. Beat in the eggs, one at a time. Stir in the vanilla and peanut butter until smooth.
    3) Combine the flour and baking powder in a small bowl. Then stir into the peanut butter mixture.
    4) Fold in the chocolate chips
    5) Spread the dough out flat on the prepared pan.
    6) Bake for 12 to 15 minutes or until tops of bars look dry. Cool in the pan, then cut into squares. NOTE: I had to bake much longer!

    Salmon Patties

    Ingredients:
    4 large baking potatoes
    2 skinless, boneless salmon fillets
    Broccoli Florets, Peas, Sweet Kernel Corn, Diced Carrots
    Butter (amount you desire)
    Lemon Juice (amount you desire)

    Directions:
    1. Boil the potatoes and mash them up with desired amount of butter

    2. Steam salmon fillets. Flake the salmon and mix it in with the mashed potatoes.


    3. Steam small florets of broccoli, peas, sweetcorn kernels, and diced carrot (until they still have a bit of crunch to them), mix into the salmon and potato mix. Squeeze in a little fresh lemon juice.


    4. Mold the mixture into patties; 1.5 to 2 inches thick. Place them on a lightly oiled baking tray. Bake in the centre of the oven at 200. Flip them after about 20 minutes and then turn the heat up full for a few minutes at the end just to brown the top and give a bit of crunch.

    Default Turtle Brownies

    Turtle Brownies


    Ingredients:
    § 1 pkg caramels

    § 1/3 cup evaporated milk


    § 1 pkg German Chocolate Cake Mix

    § ¾ cup melted margarine

    § 1 cup chopped nuts

    § 1/3 cup evaporated milk


    § 1 cup Chocolate Chips


    Directions:
    § In a sauce pan, melt together caramels and evaporated milk and then keep warm.


    § Mix together cake mix, melted margarine, chopped nuts, and evaporated milk

    § Press half the dough into a greased 9x13 pan. Bake 6 minutes at 350 degrees


    § Remove from the oven and sprinkle with 1 chocolate chips on top of the baked dough

    § Pour caramel mixture over the top of the chocolate chips

    § Top the caramel with the remaining dough mixture.

    § Bake at 350 degrees for 15-18 minutes (no longer)

    § Cool and then cut into squares.

    Baked Spaghetti
    Ingredients:
    § 1 cup chopped onion
    § 1 cup chopped green pepper
    § 1 Tbsp margarine
    § 28 oz. Can chopped tomatoes w/ juice
    § 4 oz. can stems/pieces mushrooms; drained
    § 2-1/4 oz. sliced ripe olives (optional); drained
    § 2 tsp dried oregano
    § 1 lb. Ground beef; browned & drained
    § 12 oz. Cooked spaghetti; drained
    § 2 cups shredded cheddar cheese
    § 1 can cream of mushroom soup; undiluted
    § ¼ cup water
    § ¼ cup parmesan cheese


    Directions:
    § Saute onion and green pepper in margarine until tender.
    § In a large sauce pan, combine sauted vegetables, tomatoes, mushrooms, olives, oregano and ground beef. Simmer uncovered for 10 minutes.
    § Place ½ the spaghetti in a greased 9x13 baking dish.
    § Top spaghetti with ½ the vegetable / meat mixture; sprinkle with 1 cup cheddar cheese.
    § Repeat layers
    § Mix soup and water together until smooth; pour over top of the casserole.
    § Sprinkle with parmesan cheese.
    § Bake uncovered at 350 degrees for 30 to 35 minutes or until heated through.

    § ¼ lb. Oleo (Margarine)
    § 3 cups quick oatmeal
    § 1 tsp vanilla
    § 5 Tbsp cocoa
    § ¾ cup peanut butter

    Directions:
    § In a large sauce pan, mix together sugar, milk, and margarine.
    § Boil for 1 minute; remove from heat
    § Add all remaining ingredients and mix thoroughly.
    § Drop by spoonful onto wax paper.

    Ingredients:
    § 2/3 cups margarine
    § 1 cup brown sugar
    § 4 cups Quick Oatmeal
    § ½ cup light corn syrup
    § 2 tsp vanilla
    § Dash of salt
    § 1 cup chocolate chips
    § ½ cup crunchy peanut butter

    Directions:
    § In a large bowl, mix together margarine and brown sugar
    § Add oatmeal, corn syrup, vanilla and salt to margarine/sugar mixture
    § Press into greased 9x13 pan.
    § Bake at 375 degrees for 12-15 minutes
    § In a sauce pan, over low heat, melt together chocolate chips and peanut butter.
    § Spread chocolate chip / peanut butter mixture over cooked bars
    § Cut while still warm; do not remove from pan.
    § Refrigerate to set frosting; chocolate chip/peanut butter topping.

    Ingredients:
    § 1 cup butter
    § 1-3/4 cup sugar
    § 4 eggs
    § 1 tsp vanilla
    § 3 cups flour
    § 1-1/2 tsp baking powder
    § 1 can cherry pie filling

    Frosting:
    § Powdered sugar
    § Almond or Vanilla extract
    § Water

    Directions:
    § In a mixer, cream together the butter and sugar.
    § Add eggs, one at a time. Beating after each one.
    § Add vanilla, flour, and baking powder; mix well.
    § Spread 2/3 of mixture onto a greased jelly roll pan.
    § Top dough with 1 can cherry pie filling.
    § Drop remaining dough, by teaspoons full, over cherry topping (won’t be completely covered).
    § Bake for 45 minutes at 350 degrees
    § Mix together powdered sugar, water, and extract to form frosting/glaze; to desired taste. Top bars with frosting glaze.

    Ingredients:
    § 4 cups cut/chopped rhubarb
    § ½ cup sugar
    § ¾ cup sugar
    § ½ cup oleo (margarine)
    § 1/8 tsp salt
    § 1 tsp baking powder
    § 1 cup flour
    § ½ cup milk
    § 1 cup sugar
    § 1 Tbsp Corn Starch
    § 1 cup boiling water

    Directions:
    § Place rhubarb into 9x13 pan and top with sugar.
    § Cream together sugar and oleo.
    § Add remaining ingredients and blend well.
    § Pour batter over the top of the rhubarb
    § Mix together and then spread over the top of the batter
    § Pour boiling water over the top of the rhubarb / batter mixture
    § Bake for 45 minutes at 350 degrees

    Ingredients:
    § 1-1/2 cups brown sugar
    § ½ cup Crisco
    § 1 egg
    § 1 tsp soda
    § 1 cup buttermilk
    § 2 cups sifted all purpose flour
    § 1-1/2 cups finely cut rhubarb
    § 1 tsp vanilla
    § ¼ cup white sugar
    § 1 tsp cinnamon

    Directions:
    § Mix together brown sugar, shortening and egg in electric mixer.
    § Dissolve soda in buttermilk and then add to sugar mixture.
    § Mix in small quantities of flour, then rhubarb, alternating until all combined.
    § Add vanilla, mix well.
    § Pour into 9x13 pan.
    § Combine sugar and cinnamon; sprinkle over top of cake mixture.
    § Bake at 350 degrees for 40-45 minutes.
