Baked Sweet potatoes with Apples
this is one of my favorite dishes - and I have combined 2 or 3 different recipes into this one, and it's now my favorite- but all of them start with
casserole dish, sprayed with cooking spray.
alternating layers of baked potatoes and apples.
Depending on how many of each I have, I will start with what I have more of (I prefer to start with apples, but will start with sweet potatoes if I only have 2 apples.
I use 1-2 sweet potatoes, and 2-4 apples.
12 oz peeled sweet potatoes, sliced 1/4 inch thick (I use 1-2 potatoes)
2 apples, peeled, sliced (I use 2-4, you may also use oranges, peeled, sectioned)
1/4 to 1/2 cup orange juice (fav combo is 1/4 cup OJ concentrate and 1/4 cup water)
1-2 TB honey (or pure maple syrup or other sweetener)
3/4 oz wheat germ (aprox. 3 TB) or quick oats
1/4 tsp ground cinnamon
1/8 tsp ginger
1/8 tsp nutmeg
4 tsp margarine
preheat oven to 375.
Place half the sweet potatoes slices in the bottom of a baking dish that has been sprayed with a non-stick cooking spray. Top with half the apples, then another layer of sweet potatoes, and the remainder of the apples.
In a small bowl, or measuring cup, combine OJ, spices and honey.
pour over dish.
sprinkle additional cinnamon on top, wheat germ, and dot with margarine.
bake, covered, 30 minutes, until sweet potatoes are tender.
Uncover, and bake 10 more minutes.

My Review: I made mine with 2 sweet potatoes and 4 gala apples (my favorite kind). I didn't have any wheat germ or "quick" oats on hand, just the old fashioned kind or the instant kind, so I opened up a packet of the instant (Apples & Cinnamon flavor) and used 3 Tbsp of that. I was out of aluminum foil, so I tried baking it without being covered -- big mistake! Make sure you cover it because otherwise it will take forEVer to bake, lol. I finally covered it with a flat pan and it baked faster. I forgot to put the butter/margarine on, though! (Actually I usually use Smart Balance made with olive oil.) So I think I missed out on some of the flavor it would have otherwise had with the butter flavor. Anyway, it turned out pretty good. I thought it was pretty tasty, but my DH just said it "wasn't bad."
