So I made this meal thinking that it was fairly healthy. I put 1.25 lbs of boneless skinless chicken breasts in 2 cups of chicken broth in the crock pot. I stirred in a about half a package of taco seasoning and let it cook for a few hours on high. Then I shredded the chicken and added a package of Knorr Mexican rice. I didn't look at the nutritional info, but it was rice and I didn't think it would be that bad. This made about 8 very stuffed burrito shells (maybe more). I had two for dinner last night.
So today, I am trying to be good and track on MyFitnessPal and I found out I could build a recipe (yeah I am slow, lol) So I put it all in there and OMG it was sooooo bad! Without the tortilla shell it was 355 calories just for the chicken mixture! :eek: And then each Whole wheat shell (supposed to be good for you) was another 170 calories. So about 700 calories for one meal! That is half my daily intake! Geez Louise is all I have to say about that!
