Weekly Healthy Recipe 3/28-4/4

Wow are we into April already!?!? Anyway, I wanted to put this up a couple days early so people could add the ingredients to their shopping list. I got this recipe from a friend and have been wanting to try it so I figured why not! It is off of Skinnytastedotcom. Gina includes both WW points values as well as regular nutrition information in all of her recipes. I haven't tried any of her stuff yet, but I bookmarked it for the future. I won't be adding cilantro to mine (can't stand it) and will probably use plain yellow onions instead of the scallions.

Crock Pot Santa Fe Chicken
Gina's Weight Watcher Recipes
Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts
Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g

* 24 oz (1 1/2) lbs chicken breast
* 14.4 oz can diced tomatoes with mild green chilies
* 15 oz can black beans
* 8 oz frozen corn
* 1/4 cup chopped fresh cilantro
* 14.4 oz can fat free chicken broth
* 3 scallions, chopped
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp cumin
* 1 tsp cayenne pepper (to taste)
* salt to taste

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (extra pts).

Since I am the friend that shared this recipe, lol, I made it last week! I thought it was super easy to make. I made a couple substitutions since I didn't have all the ingredients on hand. I skipped the cilantro, used yellow onion in place of the scallion, and chili powder in place of the cayenne pepper. I think the cayenne pepper would have given it alot more flavor because it tasted a little bland. I ended up adding more chili powder, which helped. I served it on brown rice with shredded cheese on top. I felt like it needed some crunch so next time I might serve it on tortilla chips or in tortilla shells and top with lettuce, salsa, etc. I would like to make it again and follow the recipe to see the difference. DH refused to eat it because he doesn't like corn mixed into things and DS ate a little. I wonder how leftovers would freeze?

Hello gals! I did in fact make this last night and so I wanted to write a review of what I thought of the dish! So here goes:

I followed the recipe exactly except for the fact of my can of "tomatoes with chilis" was slightly smaller than suggested.

I cooked this on LOW for about 8.5 hours and we served it on tortillas (I suggest using corn tortillas for the health factor) or you could almost do them like tostadas on corn shells. Topped with FF or RF sour cream and cheese!

Overall:
I was super excited to try this as it looked (and smelled) amazing. I will say I was slightly disappointed BUT I will be making it again and there are just some simple changes I will make. To me the chicken ended up being a little mushy, although it was stringy. The veggies also got so mushy that they just blended in with the chicken. I had envisioned more of a chicken and salsa type taste/feel but it was all pretty blended in the end. It also made me nervous because when I put everything in there it looked REALLY soupy but by the time it was ready to eat it was not at all, perfect for tacos! I am excited to try this again though with changes below!

Changes I'll make:
-adjust crock pot cooking time. This MIGHT just be my crock pot, but I will still cook on low and probably aim for 6 or so hours and watch it from there.
-I will add the veggies in about half way down so they stay a little more firm and you can actually distinguish them from the rest of the meal. I will probably still add a handfull of veggies to get the flavor cooked into the chicken so I might just add more veggies at the end.

Oohhh, I can't wait to make this! This is pretty similar to a black beans and rice recipe I have that I was planning on making this week. I already have most of the ingredients already so it's perfect! Yay!

I made this today, and I have to admit that I was completely skeptical about it. I HATE tomatoes and cilantro. So having both of them in one recipe was a bit scary. However, I'm trying to expand my horizons so I jumped in with both feet. The result was a success!!!!! I completely understand what Pamela was saying. If I were to ever make this again, I'd add the beans later so they don't get all mushy, But I'd have to have the tomatoes in early so that they cook down and I'm able to eat them. My Two year old, and my Three year old both liked it very much. I even have about 2 servings left for left overs tomorrow.

This recipe is now definitely in my box.

BTW - Pamela, I agree, this is a great chicken taco recipe to use!

This looks like something my husband would love! He's a huge cilantro fan, but I can't stand it, so I'll have to see if it works letting him add some to just his portion after it's served, rather than cooking it in. He probably won't mind - he always spices everything up on his plate. I'm surprised he has any taste buds left...

FWIW, we served it with cilantro on the top along with the scallions. I did cook it into the dish, as I LOVE it haha, but I think that if you omitted the cilantro it would be just fine and then your DH can just put some on his plate. Smile

I am just getting to make this today. This week has been exceptionally awful in the sleeping department so I have not done much cooking. But I made DH sleep in DS's room so I could sleep, ha ha, and today I have more energy.

I just started and already made a few adjustments. I am using onions instead of scallions because I had onions and they are cheaper anyhow. So I put those in the crock pot with all the seasonings (sans cilantro) and I substituted red pepper flakes instead of the cayenne. I realized I didn't have that after all. I added the chicken and put the pot on low. I figured I would add the beans, corn, and tomatoes after a few hours based on suggestions from pp. Well I think I will go put the tomatoes in after all, they have the chilis and stuff and that is a lot of flavor for the chicken. I will update later...

It's Later! Ok, I added the veggies about 2 hours left, but I only cooked it on low for 5 hours. I tasted it and it seemed a little bland suprisingly cause it had all that seasoning and I used mexican style tomatoes. So I added some Sriracha Hot sauce and that helped a little. I do think it was missing something...maybe mix some FF sour cream in at the end??? But I will keep it in my rotation. It was a good low point meal.

Christine, I'm making this today as well!

I made a few small adjustments. I don't have any onion powder so I just added some fresh onions and also threw in some diced serrano peppers. Other than those two things I pretty much followed the directions. It smells really good right now....I'm cooking it on high since I got a late start this morning. I'll probably serve it over some quinoa or brown rice. So far the veggies are holding up well...they don't look mushy yet but I have another hour and a half to go so we shall see!

Okay I have been thinking about his all day and even had leftovers for dinner tonight...still bland. I can't believe that it is so bland after all the seasonings. I think I will double all the seasonings next time, or possibly marinate the chicken first??? We are turning this into Nachos tonight for the game topped with cheese and sour cream!

sorry guys i got a late start on this....it is in the crockpot for dinner tonight! But now i'm kinda scared because of the mixed reviews :eek: I am having company over and that is our main dish. We are going to serve it over brown rice and will have a green salad with it. I will let you know what everyone thinks tomorrow Smile

I made this on Sunday and I added more fresh chopped onions right at the end. I served it over brown rice and quinoa and topped it with fresh scallions, cilatro and shredded cheddar. I would have topped it off with some salsa but I didn't have any on hand. I agree with some of the other posters, it was a bit bland for me, however, I didn't have any problems with the veggies being mushy. Maybe because I cooked it on high for 6 hours instead of low for 10?

Overall, I did enjoy it and it was really easy to make which is a huge plus for me. I think I will keep this recipe and make it again but will probably add a bit more spices and salt next time and a little more chicken stock. Biggrin

well the reviews are in and everyone loved it last night! I made it exactly as the recipe called for it, and I also did 6 hours on high and had no prob with mushy veggies so maybe that is the key. I also thought it was a little bland, but added red pepper flakes to the finished product and it was good. I think I'm used to things being a little bland since i've been on weight watchers, so i use a lot of red pepper flakes to spice things up. We served it over brown rice, and had a green salad and fresh veggies on the side. All the adults loved it...the kids not so much. I got my daughter to eat some rice with juice from the crockpot, but she didn't want anything else. Dirol
